How to Make Chili Fries into Pizza

Smothered saucy chili and melty cheese, there’s a reason that chili fries are undeniably delicious. I’m taking this bar food classic and amping it up by throwing it all on top of a doughy pizza crust. Ahem, YUM!

Fries are great on their own but I’m all about making them part of a meal. San Diego’s Famous Carne Asada California Burrito recipe has fries packed right inside. My Lomo Saltado with BBQ Tri Tip is another nod to the notorious spud. Want more? My Mediterranean-Style Loaded French Fries are perfect for game day. Oh, and Reuben Waffle Fries with Smokehouse Secret Sauce are incredibly easy to make (and may I say… incredibly tasty as well).

Chili Fries

HERE’S WHAT YOU’LL NEED:

This chili fries pizza starts off with one of my favorite summer recipes – my Easy Chili Recipe for Grilling Season! With just a handful of ingredients (mostly pantry staples), this chili comes together in a jiffy. You can whip this up ahead of time or whenever you’re ready to make your ‘zaa. 

FOR THE PIZZA:

  • Pizza Dough
  • Cheddar Cheese
  • Mozzarella Cheese 
  • Frozen Waffle Fries 
  • Fresh Jalapeños 
  • Green Onions
  • Fritos
  • Ranch Dressing 

FOR QUICK PICKLED RED ONIONS:

  • Red Onion
  • Apple Cider Vinegar
  • Boiling Water
  • Maple Syrup
  • Salt 

Chili Fries

HOW TO MAKE CHILI FRIES PIZZA:

  1. Make my Easy Chili Recipe for Grilling Season and set aside. Can be made up to 48 hours in advance. 
  2. Make pickled red onions by thinly slicing onion and adding to a jar with remaining ingredients. Let sit for 30 minutes. 
  3. Cook fries in oven according to package directions (timing will vary based on brand). Set aside. 
  4. Preheat grill to medium high-heat. 
  5. Roll out pizza dough until about 1/4 inch thick. 
  6. Spray dough with cooking oil on both sides and place pizza dough directly on grill grates. Cook for 2-3 minutes until slightly charred. 
  7. Flip and top with 2/3 of the chili, cheese, fries, and then remaining 1/3 of chili. Finish with sliced jalapeños and cook for additional 4-5 minutes, lid closed, or until cheese is melty. 
  8. Remove from grill and top with pickled onions, green onions, and lots of Fritos.

Serves: 4
Ingredients
FOR THE PIZZA
  • Pizza Dough (Store Bought or Homemade)
  • 2 cups No Bean Chili (recipe link above)
  • 4 oz. Cheddar Cheese, shredded
  • 8 oz. Mozzarella Cheese, shredded
  • 20 oz. Frozen Waffle Fries
  • 2 Jalapeños, sliced
  • 2-3 Green Onions, sliced
  • 1 cup Fritos, slightly crushed
  • Ranch Dressing, optional for dipping
FOR QUICK PICKLED RED ONIONS
  • ½ Red Onion, sliced thin
  • ¾ cup Apple Cider Vinegar
  • ¼ cup Boiling Water
  • 1 tsp Maple Syrup
  • 1 tsp. of Salt
Instructions
  1. Make the no-bean chili and set aside. This can be made up to 48 hours in advance if needed.

  7. Flip and top with ⅔ of the chili, cheddar, mozzarella, fries, and then remaining ⅓ of chili. Finish with sliced jalapeños and cook for additional 4-5 minutes, lid closed, or until cheese is melty.
  8. Remove from grill and top with pickled onions, green onions, and Fritos. Serve with ranch, if desired.

NOTES ON THIS RECIPE:

  • While I used store bought dough for this chili fries pizza recipe, you could easily make your own if you have the time. 
  • I prepared this pizza on the grill, but you could just as easily make it in the oven. To bake, preheat oven to 450 degrees, assemble pizza on a pizza stone or baking sheet, and cook for 10-12 minutes until cheese is bubbly and crust is slightly browned. 
  • Swap out my no-bean chili recipe for your family’s favorite. Add in beans with this Classic Chili Recipe, peppers, or even some more heat depending on your taste buds. I personally love serrano peppers here as well!
