I’m absolutely obsessed with the classic Reuben sandwich. For fun, this pinwheel recipe turns them into the ultimate party appetizer!
The San Francisco 49ers are playing in the Super Bowl next weekend, so I’ve obviously been testing different appetizers to serve our guests during the big game. This year will be a rematch against Kansas City from 2020, so it’ll totally be a nail-biting experience! In previous years I’ve served these Reuben Waffle Fries, my Tater Tot Stuffed Corned Beef Egg Rolls, and you can never go wrong with this Lusty Reuben Sandwich with a Cheese Blanket Crust (video included!).

INGREDIENTS FOR THIS REUBEN PINWHEEL RECIPE:
I kept things pretty traditional this time around and served them with homemade 1000 island for dippin’. Needless to say, they disappeared in a matter of minutes… so if you’re serving a larger crowd I’d suggest doubling the recipe. Here’s everything you’ll need:
- Puff Pastry Sheets
- Cream Cheese
- Course Ground Mustard
- Corned Beef
- Baby Swiss Cheese
- Sauerkraut
- Red Onions
- Celery Seeds
- Fresh Italian Parsley
- 1000 Island
While the red onions and celery seeds are totally optional, I do highly recommend them as an addition. You could alternatively swap them out for white onions and caraway seeds if you have those on hand… whatever tickles your fancy! Per the usual, my recipes are totally customizable. Let me know in the comments if you swap some items out or add anything else.

HOMEMADE 1000 ISLAND:
While you can certainly use the bottled kind if that’s what you prefer, I personally like to make my own. It’s so easy and comes together in less than 5 minutes. Recipe below!
- 1 cup Mayonnaise (I’m a Duke’s gal!)
- 1/4 Small Yellow Onion, minced (about 2 tbsp.)
- 3 tbsp. Ketchup
- 2 tsp. Sweet Pickle Relish
- 1 tbsp. White Wine Vinegar
- 1/2 tsp. Sweet Paprika
- 1/4 tsp. Salt
- Fresh Cracked Black Pepper, to taste (optional)
If you’re not a fan of 1000 island, go ahead and try this with my Tangy Alabama White Sauce or Buttermilk Ranch!

- 4 Tbsp. Cream Cheese, softened
- 1 Tbsp. Course Ground Mustard
- 2 Puff Pastry Sheets, thawed
- 6 oz. Corned Beef, chopped
- 8 Slices Baby Swiss Cheese (6oz), chopped
- 1 cup Sauerkraut, drained
- ¼ cup Chopped Red Onions, optional
- 1 tbsp. Celery Seeds, optional
- Italian Parsley, for serving
- 1000 Island, for serving
- Mix together the softened cream cheese and course ground mustard in a small bowl.
- Unfold the thawed puff pastry onto a cutting board or kitchen counter.
- Divide the corned beef, Swiss cheese, sauerkraut, red onions, and celery seeds between both puff pastry sheets.
- Roll the sheets "jelly roll" style and wrap each roll in plastic wrap. Refrigerate for at least 2 hours or freeze for 30 minutes.
- Preheat the oven to 400F. Remove plastic wrap and slice each pastry sheet into 8 pinwheels with a serrated knife. You will have 16 wheels total.
- Bake for 20 minutes on a parchment lined baking sheet. Flip, and then continue to bake for another 10 minutes.
- Remove from the oven and sprinkle with chopped Italian parsley. Serve immediately with 1000 island for dipping.
NOTES ON THIS RECIPE:
- Course ground mustard is my personal preference, but you can also use Dijon.
- I only had regular sauerkraut on hand, but if you want to substitute with Bavarian sauerkraut, I bet it would turn out AWESOME. What is Bavarian sauerkraut, you ask? It encompasses the addition of caraway seeds.
- Leftovers (if you have any) freeze nicely. Simply let them cool down to room temperature and store them in a freezer bag. I suggest consuming them within a month. To reheat, simply place in the air fryer or oven at 350F until warmed through.
