You’re gonna love this pimento cheese recipe served on crackers, with crudités, slathered in sandwiches, or even burgers! Serve this at your next game day gathering and watch it quickly disappear!

I’m a big fan of all things buffalo, aren’t you? With so many ways to incorporate the sauce into recipes… I always have so much fun with it! We’re a Frank’s Red Hot fam, but go ahead and use whatever buffalo sauce you enjoy most. Seriously, we’re kinda obsessed. Pimento Cheese Recipe

INGREDIENTS FOR THIS PIMENTO CHEESE RECIPE:

If you’re looking for a traditional pimento cheese recipe, my friend Jessica has got an awesome one! We collaborated a few years ago… here’s her recipe for Southern Pimento Cheese. I had some leftover Point Reyes Blue Cheese from steak salads, so I figured I’d make my own spin on this classic recipe. Here’s everything you’ll need:

  • Sharp Cheddar Cheese
  • Blue Cheese
  • Cream Cheese
  • Mayonnaise
  • Diced Pimentos
  • Garlic Powder
  • Onion Powder
  • Buffalo Sauce
  • Pickled or Fresh Jalapeño
  • Salt + Pepper

This here is a base recipe. If you’d like to add chopped green onions, fresh herbs, cooked bacon, or even dried cranberries or chopped almonds… go for it! Not a blue cheese fan? No problem! You can certainly substitute with feta.

MY EXPERIENCE WITH PIMENTO CHEESE:

I legit had no idea what pimento cheese was until 2012. Moving to Charlotte from San Francisco, I had never even heard of it. I was working at MECA Realty at the time as an accountant and my sweet friend Kelly brought in some of her family recipe from home. She handed me some crackers and said EAT IT! Haha. I immediately loved this cheesy dish and think of her every time I take a bite.

Pimento Cheese Recipe

Buffalo Blue Pimento Cheese Recipe

You're gonna love this pimento cheese recipe served on crackers, with crudités, slathered in sandwiches, or even burgers!
Serves: 3 cups
Ingredients
  • 2 cups (8 oz) Sharp Cheddar, shredded
  • ½ cup Crumbled Blue Cheese
  • 4 oz. Cream Cheese, softened
  • ¼ cup Mayonnaise
  • 4 oz. Diced Pimentos, drained
  • ¼ tsp. Garlic Powder
  • ¼ tsp. Onion Powder
  • 2 - 3 tbsp. Frank’s Buffalo Sauce, to taste
  • 4 - 5 Pickled Jalapeños or ½ Fresh Jalapeño, diced
  • Salt + Pepper, to taste
Instructions
  1. Mix all ingredients together in a bowl, taste, and add salt + black pepper to your preference.
  2. You can serve this right away, but I recommend covering and placing this in the refrigerator for at least 1 hour before serving. Enjoy!

NOTES ON THIS RECIPE:

  • While I prefer sharp or extra sharp cheddar for pimento cheese, you can certainly use any shreddable cheese you enjoy most. Some other options include gouda, white cheddar, Colby Jack, Monterey Jack, Pepper Jack, or even Swiss.
  • I always recommend shredding your own cheese. Pre-shredded cheese doesn’t have the same texture or flavor. 
  • Leftovers should be kept refrigerated, covered, and consumed within 5 days.
