Incredibly Yummy Buffalo Chicken Meatballs

Next time you’re questioning what’s for dinner, bake up a batch of buffalo chicken meatballs. Don’t forget to top ’em with some creamy buffalo sauce and a sprinkle of savory blue cheese. 

Buffalo Chicken Meatballs

These meatballs are the answer to busy weeknights, coming together in just minutes. Toss them in the oven while you heat up some pre-made rice (or cauliflower rice) as a base, open up your jar of buffalo sauce, and maybe pour yourself a cocktail. This is as hands off as it gets! Buffalo Chicken Meatballs

INGREDIENTS FOR BUFFALO CHICKEN MEATBALLS:

  • Ground Chicken
  • Plain Breadcrumbs
  • Egg
  • Salt
  • Dried Dill
  • Green Onion
  • Dried Oregano
  • Buffalo Sauce
  • Ranch or Blue Cheese Dressing
  • Blue Cheese, optional garnish
  • Green Onions, optional garnish

While ground chicken is my fave, you could easily sub in ground turkey or beef if that’s what you’ve got on hand. I used Primal Kitchen buffalo sauce, as it packs a little bit less heat than the original. However, use whatever brand you enjoy most!

Buffalo Chicken Meatballs

HERE’S HOW TO MAKE THIS RECIPE:

  1. Preheat oven to 350F degrees.
  2. In a large bowl, mix together the ground chicken, breadcrumbs, egg, salt, dill, green onion, and dried oregano until combined.
  3. Using slightly damp hands, roll 1 ½ – 2 tbsp. of the chicken mixture into balls, and place on nonstick baking sheet.
  4. Bake 15-18 minutes, turning meatballs 1-2 times during cooking so they brown on all sides.
  5. In the meantime, mix ranch dressing with buffalo sauce and set aside.
  6. Top cooked meatballs with buffalo sauce and toss to combine.
  7. Garnish with blue cheese crumbles and green onions, as desired.

Serves: 4
Ingredients
  • 1 lb. Ground Chicken
  • ¼ cup Plain Breadcrumbs
  • 1 Egg
  • 1½ tsp. Salt
  • 1 tsp. Dried Dill
  • 1 tbsp. chopped Fresh Green Onion
  • 1 tsp. Dried Oregano

TIPS FOR THIS RECIPE:

  • Please note: If you swap the chicken for ground turkey or beef, cooking times may vary. 
  • For a full meal, serve these on a bed of your favorite rice or veggie. Feeling indulgent? Air fry some these potato wedges to serve alongside. Don’t have an air fryer? No problem! Here’s some taters you can bake in the oven. 
  • If the heat of buffalo sauce is too much to handle (or you’re feeding littles), try adding a touch more ranch to your sauce for a more mellow flavor. Alternatively, you could also use your favorite bbq sauce!
