Crispy baby romaine paired flawlessly with herbs, crunchy veggies, wonton strips, savory edamame, and cashews. Oh, and the sesame salad dressing for the win!
We’re currently undergoing a massive heatwave here in Charlotte. So obviously we find ourselves craving a cool, lighter meal that’s still filling, incredibly flavorful, and easy to make. Oh, and added bonus: no oven required! We love this dish on its own… but you can also add my Grilled Sesame Ginger Chicken or New York Strip Steak for extra protein!

INGREDIENTS FOR THIS RECIPE:
I love straight forward and simple, playful salads. Pile everything together in one serving bowl and you’re all set. This one here has got crunch and zip, which is totally addicting. I usually make the dressing ahead of time, as it’ll keep in the fridge for up to 3 days.
FOR THE SALAD:

- Carrots
- Edamame

- Roasted Cashews

- Sesame Seeds
SESAME SALAD DRESSING:
- Avocado Oil
- Toasted Sesame Oil
- Garlic Cloves
- Rice Vinegar
- Lime Juice
- Liquid Aminos
- White Miso Paste
- Mayonnaise
- Sugar

- ¼ cup Avocado Oil
- 2 tbsp. Toasted Sesame Oil
- 2 Garlic Cloves, minced
- 2 tbsp. Rice Vinegar
- 1 tbsp. Lime Juice
- 1 tsp. Liquid Aminos
- 1 tbsp. White Miso Paste
- ¼ cup Mayonnaise
- 1 - 2 tsp. Sugar
- 4 oz. Soli Organic Baby Romaine
- 1 cup Shredded Cabbage
- ¼ cup Shredded Carrots
- 8 oz. Cooked & Cooled Edamame
- ⅓ cup Fried Wonton Strips
- ½ cup Roasted Cashews
- 1 Soli Organic Chives Clamshell (.5 oz), chopped
- 1 Soli Organic Cilantro Clamshell (.5 oz), chopped
- Sesame Seeds, as desired
- Whisk all the ingredients together in a mason jar for the dressing. Cover with the lid and place in the refrigerator until you're ready to use.
- Add all ingredients to a large serving bowl for the salad. Drizzle with desired amount of dressing, toss, and serve immediately.
NOTES ON THIS RECIPE:
- While the miso paste isn’t 100% necessary for the dressing, it does add a super delicious flavor that shouldn’t be missed. You can find miso paste in your local grocer’s produce section, usually located by the tofu.
- I only recommend making the salad right before you’re ready to enjoy. It’s easy to put together, and will only take a few minutes.
- The dressing will also be delicious as a vinaigrette. Simply omit the mayo, then adjust as needed for your personal taste preference for the other ingredients.
