Super Crunchy Buffalo Chicken Loaded Fries

Who doesn’t love a batch of fully loaded fries? Serve as an appetizer for game day or an easy weeknight meal in about 30 minutes. Seriously, so delish.

I’m always on the hunt for easy recipes that are big on flavor. This one delivers, right here. It’s hearty, semi-spicy (but not too spicy), perfectly cheesy, and hints of a little sweetness from the fried onions. Give it a drizzle of ranch and you’re good to go.

Sheet Pan Buffalo Chicken Fries

So, these were inspired by a recent visit I took to Cheat’s Cheesesteaks in Charlotte. We’ve been adventuring around town checking out restaurants that utilize Springer Mountain Farms Chicken and my goodness, their creations were incredibly tasty. Here’s our video recap at the restaurant on Instagram.

So of course, during the following week when I was craving their Buffalo Chicken Sandwich with fries… I thought, why not mash the two together into one fabulous meal? 

Ingredients for Buffalo Fried Chicken

INGREDIENTS FOR THIS LOADED FRIES RECIPE:

FOR THE BUFFALO SAUCE:

  • Buffalo Hot Sauce (I like Frank’s RedHot)
  • Salted Butter
  • Worcestershire Sauce
  • Garlic Powder
  • Jalapeño
  • Salt + Pepper

TO ASSEMBLE THE FRIES PLATTER:

  • Springer Mountain Farms Chicken Strips
  • French Fries
  • Provolone Cheese
  • Mozzarella
  • Fried Onions
  • Ranch
  • Green Onions

COMMON Q&A: 

WHAT KIND OF FRENCH FRIES ARE BEST FOR BUFFALO CHICKEN FRIES? I love a good crinkle cut fry, but you can use whichever ones you enjoy most. Since crinkle cut is a little thicker I think that they hold up well to the cheese, sauces, and remain crispier than other varieties. Oh, and my second choice would be waffle fries. I bake mine about 10 minutes longer than the packaged directions to make sure they’re extra crispy.

WHY DO YOU ADD THE OTHER INGREDIENTS TO THE BUFFALO SAUCE? I personally do it to add extra flavors and texture. However, if you want to use the buffalo sauce on its own straight from the bottle that’s ok too.

CAN I USE DIFFERENT CHEESES? Of course! The sandwich shop I went to used provolone, so I made sure to start with that. Then I always have mozzarella here at home, so I thought the melty factor would pair well. Other cheeses that would work good include cheddar, Monterey Jack, or Pepper Jack for those who want to add some spice. 

DOES BLUE CHEESE TASTE GOOD WITH THIS INSTEAD OF RANCH? Yup! It’s all about your personal preference so feel free to make the adjustments you’d like. I think blue cheese crumbles would taste fantastic here and if you want to swap the blue cheese dressing for ranch… go for it! Also, if you want to make your own ranch at home I’ve got a fabulous Buttermilk Ranch Dressing we make quite often.

CAN THESE LOADED FRIES BE REHEATED? Personally, I wouldn’t recommend it as these taste best straight out of the oven. If for some reason you have leftovers… you can try to pop them back into the oven again, but they won’t be as crispy as before.

Ingredients
  

FOR THE BUFFALO SAUCE:

  • 1 cup Buffalo Hot Sauce
  • 5 tbsp. Salted Butter
  • 1/2 tsp. Worcestershire Sauce
  • 1/2 tsp. Garlic Powder
  • 1 Jalapeño, seeded and chopped
  • Salt + Pepper, to taste

TO ASSEMBLE THE BUFFALO CHICKEN FRIES:

  • 8 Chicken Strips, cut into smaller chunks
  • 26 oz. Frozen French Fries
  • 8 oz. Sliced Provolone Cheese
  • 1.5 cups Shredded Mozzarella Cheese
  • 1/2 cup French Fried Onions
  • 3/4 cup Ranch, or more/less to taste
  • 1/2 cup Sliced Green Onions

Instructions
 

  • Preheat the oven to 450F. Spread the French fries onto a sheet pan and bake according to their packaged directions. Add an extra 10 minutes to the suggested time to ensure the fries are super crispy.
  • While the fries are cooking, go ahead and bake or air fry the chicken strips according to their packaged directions. Once cooked, chop into smaller bite-sized pieces.
  • Meanwhile, mix all ingredients for the buffalo sauce in a saucepan over medium-high heat. Once bubbly, set aside.
  • Once crispy, remove the fries from the oven and top with the chicken, provolone cheese slices, sprinkle with mozzarella cheese and French fried onions. Cook for 8 - 10 minutes until the French fried onions are golden and cheese is melted.
  • Drizzle the cheesy chicken fries with desired amount of buffalo sauce and ranch. Top with green onions and serve immediately.

NOTES ON THIS RECIPE:

  • Make sure the fries are in a single layer on the sheet pan so they become crispier faster as they bake.
  • Springer Mountain Farms also provides their Chicken Breast Chunks if you want to skip the chopping step after the chicken has been cooked.
  • Adjust ingredients to the number of servings you will consume right away, as I don’t recommend reheating leftovers (they won’t be as crispy).
