PRO-TIPS FOR ASSEMBLING THESE SHRIMP TOASTS:
CROSTINI TOASTS: While these are super easy to make at home, you can usually find them already made at your local grocer. Or you can swap these out for Melba toasts which are usually found in the deli section or cracker aisle.
COCONUT CREAM SAUCE: Coconut cream can be found in the bakery or Asian section at your local grocer. You can make this up to a day in advance and store it in the refrigerator, covered. Just make sure to bring it back to semi-room temperature so it spreads easier for serving.
TOSTED COCONUT FLAKES: If you can’t find these premade, go ahead and make them at home! Simply spread out the desired amount of unsweetened coconut flakes on a large baking sheet. Preheat the oven to 350F. Bake for 4 minutes, remove and stir, then return to the oven for another 4 – 5 minutes. Just make sure to check them every minute during the second baking to make sure they don’t burn.
JUST SHRIMP NUGGETS: These are a new twist on a traditional chicken nugget but made with high quality shrimp. You can find them in the freezer section at your local Harris Teeter in the Carolinas and Virginia. The shrimp nuggets cook quickly, making this a great recipe when you want something impressive without spending hours in the kitchen.

Shrimp Toast with Coconut Cream, Pepperoncini, and Hot Honey
Ingredients
COCONUT SHRIMP SAUCE:
- 1/4 cup Coconut Cream
- 1/4 cup Sour Cream
- 2 tbsp. Maple Syrup, or more to taste
- 1/4 cup Lime Juice
- 2 tbsp. Toasted Coconut Flakes
FOR PLATING:
- 12 Toasted Crostini Slices or Melba Toasts
- 12 Just Shrimp Nuggets
- 1/4 cup Sliced Pepperoncini's, drained and sliced
- Hot Honey, drizzle to taste
- 1/4 cup Toasted Coconut Flakes
- Red Pepper Flakes, optional to taste
- Chives, for garnish
Instructions
- Mix all ingredients for the coconut shrimp sauce together in a large bowl. Set aside in the refrigerator until you’re ready to serve.
- Cook Just Shrimp Nuggets according to package directions.
- To assemble, set out the crostini slices, top each with a Just Shrimp Nugget, then desired amount of coconut shrimp sauce, pepperoncini’s, hot honey, and toasted coconut flakes. If desired, sprinkle with red pepper flakes and chives. Serve immediately.
