If you’re looking for an easy snack to nosh on while watching football or a quick weeknight protein to serve over rice, these Chipotle Chicken Meatballs are a true crowd-pleaser.
I’ve never met a meatball that I didn’t love and these juicy and flavorful gems are at the top of our list. They’re savory, moist, and I absolutely swoon when I serve them with my South American Chimichurri Sauce for dunking. INGREDIENTS FOR THESE CHIPOTLE CHICKEN MEATBALLS:
This makes 15 medium-sized meatballs. If you’d prefer, you could make them half the size to create 30 bite sized.
- 92% Lean Springer Mountain Farms Ground Chicken
- Small Yellow Onion
- Garlic
- Chipotles in Adobo
- Seasoned Panko Breadcrumbs
- Cojita Cheese
- Cilantro
- Egg
- Heavy Cream
- Salt + Black Pepper
I prefer to use the 92% ground chicken rather than 99% fat free because the additional fat keeps the meatballs flavorful and juicy. I also add a little splash of heavy cream as well for good measure. Per the usual, I opt for Springer Mountain Farms chicken, as they provide the best flavor and quality on the market.
While I served these with my South American Chimichurri Sauce, you could also plate them with this Roasted Red Pepper Cream Sauce or Homemade Buttermilk Ranch.

TIPS ON METHODS FOR COOKING:
No matter which method you prefer, always check the meatballs to make sure their internal temperature has reached a minimum of 165F. Appliances can vary in cooking temperatures and times, so always keep this in mind.
AIR FRYER: Spray the interior basket or tray in the air fryer with cooking spray. Working in batches, arrange the meatballs in the basket or tray, making sure they are not touching. Air fry at 370F for roughly 6 – 8 minutes.
BAKING: Preheat the oven to 400F. Arrange the meatballs on a baking sheet that’s prepped with parchment paper. Bake for 18 – 20 minutes.

Best Air Fryer (or Baked) Chipotle Chicken Meatballs
Ingredients
- 1 lb. 92% Lean Ground Chicken
- 1/4 Small Yellow Onion, finely chopped
- 3 Garlic Cloves, finely chopped
- 2 Chipotles in Adobo + 2 tsp. Adobo Sauce, chopped
- 1 cup Seasoned Panko Breadcrumbs
- 1/4 cup Crumbled Cojita Cheese
- 1/4 cup Chopped Cilantro
- 1 Egg, whisked
- 2 tbsp. Heavy Cream
- 1/2 tsp. Salt
- 1/4 tsp. Freshly Cracked Black Pepper
- Chimichurri (or your favorite sauce), for dipping
Instructions
- Mix the chicken in a large bowl with the onion, garlic, chipotles and adobo sauce, breadcrumbs, cojita, cilantro, egg, heavy cream, salt and pepper. Roll into 15 equal sized meatballs.
- AIR FRYER: Spray the interior basket or tray in the air fryer with cooking spray. Working in batches, arrange the meatballs in the basket or tray, making sure they are not touching. Air fry at 370F for roughly 6 - 8 minutes.
