Are you on the hunt for a few Thanksgiving leftover recipes? This Turkey Salad is an easy way to revamp that bird into a swoon-worthy sandwich or wrap.
We hosted Thanksgiving at our house this year and had it catered by one of our favorite barbecue joints, Midwood Smokehouse. We had a total of ten guests at our dinner table, but I probably ordered enough food for twenty. I always over-order… but I’d rather have too much food than risk running out. In an effort to use up a heaping mound of leftover turkey, I created this Turkey Salad recipe for today’s lunch.

We had some pretzel sliders in our freezer, so I made these mini sandwiches. However, feel free to use your favorite rolls, buns, or make a low-carb lettuce wrap! Serve with a side of chips or cup of soup to make the meal complete.
These bad boys couldn’t be easier to make.
With just a few staples you probably already have on hand, you can turn yesterday’s scraps into today’s shining star. I absolutely love the little zing this dish gets from the fresh lemon juice and diced pickles. Feel free to swap whatever fresh herbs you have on hand. Dill would make an excellent substitution if you didn’t happen to have fresh thyme in your kitchen’s garden.
- 4 cups chopped Leftover Turkey
- ¼ cup diced Pickles
- ½ cup diced Celery
- ¼ cup chopped Red Onion
- ½ cup Mayonnaise
- 1 Tbsp. Whole Grain Mustard
- ½ Lemon, juiced
- 1 tsp. Sugar
- 2 tsp. chopped Fresh Thyme
- Rolls or Lettuce Wraps, for serving
- Add all ingredients In a large bowl and stir until well combined.
- Season with salt and pepper, to taste, and serve immediately on your favorite rolls or lettuce wraps.
JESS NOTES:
We ended up drizzling ours with a bit of Sriracha… and wow! Talk about a flavor explosion in your mouth. I think I might add some chopped jalapeños to the dish next time around. Mmmm. If you happen to have some avocados lying around, I think those would make an excellent addition as well.
