When you’re seeking an easy, customizable side dish… there’s nothing more satisfying than fresh guacamole. Hola, bonita! Dip, dip, hooray!
Have you ever noshed on a tablescape of various appetizers for your main meal? If your answer is no, you’re seriously missing out. Whether it’s game day, you’re entertaining friends, or it’s simply a Tuesday night on the patio… a random collection of savory, sweet, crunchy and smooth ingredients will satisfy the masses. In addition to guacamole, other items we like to nosh on include these Buffalo Meatball Taquitos, my Potato Chip Crusted Chicken Fingers, and these Cheesy Dill Pickle Chips.
INGREDIENTS FOR FRESH GUACAMOLE:
Growing up in California, we always had an abundance of avocados readily available. I’d come up with different guacamole recipes with what I had on hand and this combo has always been a fav.
- Avocados
- Salt
- Fresh Lime Juice
- Jalapeño
- Mango
- Pomegranate Seeds
- Sweet White Onion
- Cilantro
- Plantain Chips
My mom used to fry-up plantains when I was little for an easy side dish. Honestly, not sure why I haven’t posted her recipe yet on my blog? That’ll change soon. I personally LOVE plantains! Served in chip form, they’re the perfect vehicle for guacamole.
HOW TO MAKE THIS RECIPE:
Honestly, this couldn’t be more simple to make. All you need is a knife, a bowl, spoon and a fork. You have those on hand, don’t ya? 😉
- Cut the avocado in half and remove the pit. Scoop the inner flesh into a bowl and repeat with the second avocado. Discard the skins.
- Smash the avocado with a fork, until desired consistency.
- Mix together with remaining ingredients and serve with plantain chips. Enjoy immediately.

- Juice of ½ Lime
- 1 tsp. Salt or more to taste
- ½ Jalapeño, seeded and minced
- 1 Mango, chopped
- ½ cup Pomegranate Seeds + more for garnish
- ¼ Sweet White Onion, minced
- ½ cup Cilantro, chopped
- Plantain Chips, for serving

NOTES ON THIS RECIPE:
- Fresh lime juice helps the avocado stay green, adds a subtle acidity and brings everything together. I do not recommend skipping this ingredient!
- I prefer the milder taste of sweet white onion, but you can also use shallots, red onion or whatever you enjoy most.
- While I personally love the taste of plantain chips with guacamole, you can also serve this with regular tortilla chips or smeared on mini bell peppers for those who are trying to stay low carb.
