This healthy chicken salad recipe is one of the tastiest I’ve ever made. Even my neighbor said it was the best chicken salad he’s ever had!
I’ve always been a fan of chicken salad… especially on sandwiches! Ya’ll know how much I heart my handhelds. Today’s version is a little bit lighter, utilizing Greek Yogurt to add a tangy flavor, more protein, and lessen the calories. Other sandwich-salad combo’s you might enjoy include my Miso-Spiked Deviled Egg Salad, this Cobb Salad Grilled Chicken, and my California-Inspired Chickpea and Avocado Salad (which tastes great on wraps!).

FRUIT & VEGGIE PACKED CHICKEN SALAD:
I’ve never really been a fan of grapes in my chicken salad… but apples make my tastebuds swoon! SnapDragon Apples are the perfect addition. They’re super crunchy, deliciously sweet, and pair perfectly with the other ingredients I like to add. Here’s everything that you’ll need:
FOR THE CHICKEN SALAD:
- Rotisserie Chicken
- SnapDragon Apples
- Celery
- Red Onion
- Pecans
- Crumbled Feta Cheese
- Salt
- Ground Black Pepper
- Italian Parsley
FOR THE DRESSING:
- 2% Plain Greek Yogurt
- Mayonnaise
- Dijon Mustard
- Apple Cider Vinegar
TO MAKE SANDWICHES:
- Baguette or Rolls
- Sliced Cucumbers
- Sliced Tomatoes
- Green Leaf Lettuce
I usually like the taste of pecans in my chicken salad, but you can easily substitute with sliced almonds (like I did in this Asian Ramen Salad) or you can utilize cashews and/or walnuts. Seriously, whatever you have on hand and enjoy the most will work!

- 1 cup Pecans, chopped
- 1 Rotisserie Chicken, shredded (about 4 cups)
- 1 SnapDragon Apple, cored and chopped
- 4 Celery Ribs, diced
- ¼ Red Onion
- ½ cup Crumbled Feta Cheese
- ½ tsp. Salt
- ½ tsp. Ground Black Pepper
- ¼ cup Italian Parsley, chopped
- ½ cup 2% Plain Greek Yogurt
- ½ cup Mayonnaise
- 1 tbsp. Dijon Mustard
- ¼ cup Apple Cider Vinegar
- Baguette or Rolls
- Sliced Cucumbers
- Sliced Tomatoes
- Green Leaf Lettuce
- Toast the pecans in a dry skillet until slightly more golden and fragrant. About 3 minutes.
- Dice the apples, veggies, and shred the chicken. Then mix all ingredients for the chicken salad together in a large bowl.
- Whisk all ingredients together for the dressing and pour over the chicken salad. Toss together to coat.
- To make sandwiches, simply serve on your favorite bread and top with sliced cucumbers, sliced tomatoes, and some green leaf lettuce.
NOTES ON THIS RECIPE:
- Toasting the pecans is completely optional, I just like the extra flavor that comes from this method.
- Crumbled feta cheese adds a hint of saltiness that I think pairs fabulously with the sweet apples and savory chicken. Feel free to substitute out if you’d like… but I highly recommend it!
- This can be enjoyed on it’s own, served over a bed of lettuce, or inside sandwiches! Ooooh… I wonder if this would taste good inside spring rolls? Mmmm. Stay tuned on that one! Until then, here’s a Veggie Spring Roll recipe!
