Healthy Chicken Salad Recipe with Apples

This healthy chicken salad recipe is one of the tastiest I've ever made. Even my neighbor said it was the best chicken salad he's ever had!
Serves: 12
Ingredients
FOR THE CHICKEN SALAD:
  • 1 cup Pecans, chopped
  • 1 Rotisserie Chicken, shredded (about 4 cups)
  • 1 SnapDragon Apple, cored and chopped
  • 4 Celery Ribs, diced
  • ¼ Red Onion
  • ½ cup Crumbled Feta Cheese
  • ½ tsp. Salt
  • ½ tsp. Ground Black Pepper
  • ¼ cup Italian Parsley, chopped
FOR THE DRESSING:
  • ½ cup 2% Plain Greek Yogurt
  • ½ cup Mayonnaise
  • 1 tbsp. Dijon Mustard
  • ¼ cup Apple Cider Vinegar
TO MAKE SANDWICHES:
  • Baguette or Rolls
  • Sliced Cucumbers
  • Sliced Tomatoes
  • Green Leaf Lettuce
Instructions
  1. Toast the pecans in a dry skillet until slightly more golden and fragrant. About 3 minutes.
  2. Dice the apples, veggies, and shred the chicken. Then mix all ingredients for the chicken salad together in a large bowl.
  3. Whisk all ingredients together for the dressing and pour over the chicken salad. Toss together to coat.
  4. To make sandwiches, simply serve on your favorite bread and top with sliced cucumbers, sliced tomatoes, and some green leaf lettuce.
