Weeknight dinner can’t get any tastier than this pizza-inspired baked tortellini. Satisfy the entire family with this cheesy masterpiece!
Baked tortellini is an indulgent situation to begin with, but add some extra cheese, pepperoni, peppers, and olives on top and it is NEXT level. INGREDIENTS YOU’LL NEED:
- Fresh Cheese Tortellini
- Jarred Pasta Sauce
- Fresh Mozzarella
- Mild Italian Chicken Sausage
- Olive Oil
- Pepperoni
- Sliced Black Olives
- Mini Bell Peppers
- Soffrito, optional garnish
- Fresh Parsley, optional garnish
- Parmesan Cheese, optional garnish
- Fresh Basil, optional garnish
HOW TO MAKE THIS RECIPE:
- Boil water and cook tortellini based on package directions (each brand will vary just slightly). Make sure to salt your water for the best taste!
- Preheat oven to 350F degrees.
- Cut sausage into rounds. Cook in medium pan with 1 tablespoon of olive oil, tossing until fully cooked. Approximately 5-7 minutes.
- Once tortellini is cooked and drained, mix tortellini with tomato sauce and mozzarella cheese. Reserve ¼ of the cheese.
- Pour saucy tortellini mixture into medium casserole dish and top with pepperoni, olives, and peppers.
- Finish by sprinkling with reserved mozzarella cheese on top.
- Bake at 350 for 15-20 minutes until cheese is melted and bubbly.
- Garnish with soffrito, parsley, basil, and parmesan cheese!

- 28 oz. Jar of Pasta Sauce
- 1 Tbsp. Olive Oil
- 1 Lb. Fresh Mozzarella, cut into small cubes
- 15-20 Slices of Pepperoni
- 4 oz. Can Sliced Black Olives
- ¼ Cup Mini Bell Peppers, sliced
- Soffrito, optional garnish
- Fresh Parsley, optional garnish
- Parmesan Cheese, optional garnish
- Fresh Basil, optional garnish

TIPS FOR THIS RECIPE:
- This pasta dish reheats wonderfully. You can refrigerate or freeze it and simply reheat by bringing it back to temperature in the oven. Pouring a few tablespoons of water over the pasta will keep it from drying out.
- The Sofritto seasoning I used includes a blend of dried crispy onions, sun-dried tomatoes, sea salt, garlic, red peppers, parsley, rosemary, and sage. If you can’t find a similar mix, you can always make your own by combining equal parts of these spices! Trader Joe’s keeps it easy with a pre-made version.
