The Most Addicting Baked Tortellini

Weeknight dinner can't get any tastier than this pizza-inspired baked tortellini. Satisfy the entire family with this cheesy masterpiece!
Serves: 8
  • 3 Lbs. Fresh Cheese Tortellini
  • 1 Lb. Mild Italian Chicken Sausage
  • 28 oz. Jar of Pasta Sauce
  • 1 Tbsp. Olive Oil
  • 1 Lb. Fresh Mozzarella, cut into small cubes
  • 15-20 Slices of Pepperoni
  • 4 oz. Can Sliced Black Olives
  • ¼ Cup Mini Bell Peppers, sliced
  • Soffrito, optional garnish
  • Fresh Parsley, optional garnish
  • Parmesan Cheese, optional garnish
  • Fresh Basil, optional garnish
  1. Boil water and cook tortellini based on package directions. Make sure to add salt to your water!
  2. Preheat oven to 350 degrees.
  3. Cut sausage into rounds. Cook in medium pan with 1 tablespoon of olive oil, tossing until fully cooked. Approximately 5-7 minutes.
  4. Once tortellini is cooked and drain tortellini and mix with tomato sauce and mozzarella cheese. Reserve ¼ of the cheese.
  5. Pour mixture into medium casserole dish and top with pepperoni, olives, and peppers. Top with reserved mozzarella cheese.
  6. Bake at 350 for 15-20 minutes until cheese is melted and bubbly.
  7. Top with soffrito, parsley, and parmesan cheese.
