Sicily Stacks are one of my favorite puff pastry appetizers – basically my take on a savory Pizza Pop Tart. Puff pastry is one of those store bought shortcuts that never fails to deliver a flakey, buttery, dough that can be topped, rolled, and filled with all of the goodies… in this case, sauce, cheese, and pepperoni.

HERE’S WHAT YOU’LL NEED:
You can’t go wrong with the classic pizza trio of tomato sauce, mozzarella cheese, and pepperoni. Here at our house, this combo is kid-friendly and family approved!
- Puff Pastry Sheets
- Jarred Pizza Sauce (or my no-cook pizza sauce)
- Pepperoni
- Mozzarella Cheese
- Parmesan Cheese
- Italian Seasoning
- Egg
- Fresh Basil
However, if you wan’t to make these your own feel free to fill them with any of your favorite pizza toppings. I personally like mushrooms, crumbled sausage, feta, and fresh spinach!
HOW TO MAKE THESE CHEESY HANDHELDS:
- Allow the puff pastry to thaw completely. Roll each sheet until they are about a 1/4 inch thick.
- Preheat the oven to 400 degrees and cut each sheet in to 8 rectangles (4 cuts lengthwise and one cut down the middle to divide each of the 4 cuts into 2). Repeat with second puff pastry sheet.
- Shred the mozzarella cheese and set aside.
- Top 1 rectangle with 1-2 tablespoons of pizza sauce, 2-3 tablespoons of mozzarella cheese, and 6 pepperoni. Top with a second puff pastry rectangle and use the edge of a fork to press the edges together and seal. Repeat with remaining rectangles.
- Create and egg wash by whisking one egg and adding 2 tablespoons of water. Brush each pizza pastry with egg wash and then sprinkle with parmesan cheese and Italian seasoning.
- Bake for approximately 15-18 minutes until pastry is golden brown.
- Garnish with fresh basil and serve with your favorite pizza dipping sauce.

Roasted Red Pepper Sauce with Basil

- 1 cup Jarred Pizza Sauce
- 48 Pepperoni Slices
- 8 oz. Mozzarella Cheese, shredded
- ⅓ cup Grated Parmesan Cheese
- 2 Tbsp. Italian Seasoning
- 1 Egg
- Fresh Basil, optional garnish

NOTES ON THIS RECIPE:
- The sky is the limit with these little puff pastry appetizers. You can fill them with pesto instead of red sauce, sub other meats for the pepperoni, or add your favorite vegetables.
- The size on these is about 3 inches by 5 inches. If you prefer a smaller app, you can adjust accordingly. Just keep in mind they will cook slightly quicker.
- Puff pastry is typically sold in the frozen dessert section along with frozen pie crusts at your local grocery store.
