This cheeseburger meatloaf is a twist on the classic meatloaf. It combines two of my favorite comfort foods and is totally crave-worthy.
I primarily work from home, as I need a full kitchen to do my work on a daily basis. Once a week or so I will go to my co-working space for an “admin” day, but most of the time I take over our downstairs while I cook, photograph / video in my studio, and write (Do you know of a co-working space that has a full kitchen? Whew, that would be fun! Let me know!). Most of the time I have the Food Network playing in the background, so when I heard Ree Drummond was making cheeseburger meatloaf…. I immediately stopped in my tracks and walked over to the TV to check it out. Turns out, I had everything readily available to make my own version… so here we are. INGREDIENTS FOR THIS RECIPE:
In 2018 I was invited with a group of bloggers for a 2-day road trip through The Olde English District of South Carolina. I had recently found out I was pregnant with our second son, so I joked that this was his 2nd baby food blogger trip 😉 It was at Flipside Cafe that I dined with Ed Currie, the creator of the hottest pepper in the world… The Carolina Reaper. I’m a huge fan of everything spicy, so when I found a Carolina Reaper spiked Monterey Jack cheese during my most recent shopping trip, I knew I had to give it a whirl. Here’s everything you’ll need:
FOR THE SINGLE SERVING MEATLOAVES:
- Ground Beef
- Bacon
- Seasoned Panko Breadcrumbs
- Egg
- Ketchup
- Yellow Mustard
- Garlic Powder
- Red Onion
- Monterey Jack Cheese
SIMPLE BURGER-MEATLOAF SAUCE:
- Ketchup
- Yellow Mustard
- Onion Powder
- Worcestershire Sauce
As I mentioned above, I used the Carolina Reaper cheese in this recipe. However, feel free to use whatever cheese you enjoy most. Any melty variety will work. I’d suggest cheddar, havarti, Jarlsberg, fontina, gouda, or provolone.

- 1 lb. Ground Beef
- 6 Bacon Strips, cooked until crispy
- ¼ cup Seasoned Panko Breadcrumbs
- 1 Egg
- 1 tbsp. Ketchup
- 2 tsp. Yellow Mustard
- 1 tsp. Garlic Powder
- ¼ cup Minced Red Onion
- 6 oz. Melty Cheese, cut into cubes
- Dill Pickles, for serving
- White Sesame Seeds, for serving
- ½ cup Ketchup
- 2 tbsp. Yellow Mustard
- 1 tsp. Onion Powder
- 1 tsp. Worcestershire Sauce
- Preheat the oven to 350F. Line a baking sheet with parchment paper and set aside.
- Mix tother all ingredients for the meatloaf (except for the dill pickle) in a large bowl until combined.
- Separate the meatloaf mix into four sections and form each one into individual loaves. Place the loaves on the prepared baking sheet.
- Whisk together all ingredients for the cheeseburger meatloaf sauce. Dollop 1 - 2 tablespoons of sauce on each meatloaf and spread over with a spoon. Reserve any remaining for serving.
- Bake for 25 minutes, or until internal temperature has reached 160F. Sprinkle each meatloaf with sesame seeds, then plate each loaf individually with desired sides and provide chopped pickles on the side for serving.
NOTES ON THIS RECIPE:
- Bacon isn’t mandatory, but I mean… if you’re going to nosh on a “burger”, wouldn’t you want to add bacon?
- Because I utilize seasoned panko breadcrumbs, I personally didn’t feel like the meat mixture needed extra salt. However, if you feel otherwise go ahead and add some!
- Not a fan of red onion (It cooks when the meatloaf does, btw. So it’s not raw.)? No problem! Go ahead and swap it with white onion or shallots.
- While I intended to use white sesame seeds, I ran out and substituted with Everything But the Bagel Seasoning. Go ahead and do the same if you prefer!
