SUNDAY SUPPER:
Trying to pack some extra veggies into your diet this January? This Veggie Packed Ginger Shrimp Buddha Bowl is light but super tasty. It’s easy to prep, nutritious, and fulfilling and makes a great meal prep meal for the week ahead.
MEATLESS MONDAY:
You will not miss the meat one bit in my Totally Epic Vegan Nachos. The name speaks for itself – Cuban black beans, fresh herbs, salsa, avocado, and the VIP – a creamy, spicy cheese sauce. My mouth is watering!
TASTY TUESDAY:
Sauced up with bbq sauce, pineapple chunks, and peppers, these Slow Cooker Meatballs pair great with rice, inside sliders, or simply enjoy them on their own!
WACKY WEDNESDAY:
Looking for a unique pasta dish to throw in the mix this week? Look no further. This Roasted Acorn Squash and Sausage Pasta is smothered in a rich white wine sauce with roasted acorn squash, parmesan, sautéed onions, garlic, and herbs.
TOASTY THURSDAY:
It doesn’t get easier than a handheld for dinner. These Pepper Jack Beef Pot Roast Sliders house a few layers … java-braised beef, Pepper Jack cheese, smashed avocado, and garlic mayo. Yum!
FREE-FOR-ALL FRIDAY:
Dinner that can be on the table in 30 minutes is my Friday jam. If you’re looking for something a little healthier than takeout, my quick and easy chili is made with mostly pantry staples… easy peasy!
SASSY SALAD SATURDAY:
Chickpea Avocado Salad is a delicious combination of refreshing fruits, veggies, mozzarella, and walnuts all tossed in a homemade herb vinaigrette. You’re going to love this irresistible combination, I promise!
