Welcome to my weekly series: Sunday Meal Prep Planning Ideas! I hope my recipes inspire you to get cookin’ and eat a more colorful plate.

Sunday Supper:
I absolutely love this Roasted Pork Loin with Apples and Fingerling Potatoes. Leftovers taste fabulous inside a sandwich or wrap with a drizzle of my Alabama White Sauce. Hooray for easy lunch ideas!
Meatless Monday:
Is there anything more addicting than a Mac and Cheese Recipe topped with Flaming Hot Cheetos? Talk about the best of both worlds! The blog post is geared around plant-based ground but feel free to substitute with ground sirloin if you’re a meat eater. Oh, or even pulled pork! I might have to try that and write up a spin-off blog.
Tasty Tuesday:
Bust out your slow-cooker and let it do the work for you! Serve these BBQ Hawaiian Meatballs on their own over a bed of rice (or cauliflower rice for low carb). You could also incorporate them into a deliciously cheesy slider recipe! The blog post lists both methods for your feasting pleasure.
Wacky Wednesday:
Can’t decide if you like green or red sauce for your fiesta evening? Get through your hump day with these Verde + Roja Mexican Enchiladas. Serve them with a side of beans, Spanish rice and a side of chips with salsa.
Toasty Thursday:
We took a stab at Air Fryer Nashville Hot Chicken Sandwiches and will (seriously) never turn back. Drizzle them with blue cheese and enjoy alongside a small salad to make the meal complete.
Free-For-All Friday:
Today’s the perfect day to express your love for these Mediterranean-Style Fully Loaded French Fries. I mean, how can you go wrong with Roasted Red Pepper Sauce, Whipped Feta, ripe tomatoes, creamy chickpeas, crunchy romaine, briney capers and fresh Italian parsley? Insert a drool emoji, right here.
Sassy Salad Saturday:
I’m a fan of big salads all year round. Cobb Salad with Super Creamy Italian Dressing is definitely a favorite. I typically use rotisserie chicken as the protein, but you can easily swap that out with grilled steak, shrimp or salmon.
