One of the first things I taught our son was how to make avocado toast. Easy, filling, and oh-so-satisfying. It’s honestly one of our favorite breakfasts!
When it comes to avocados, my love runs deep. Growing up in California, I practically ate them every single day. It was pretty much the norm to see them sold on street corners by local farmers. Not a bad way to grow up, in my opinion.
Before diving face-first into my favorite variations of toasty delights, let’s go over some avocado Q & A. Shall we?
HOW DO YOU PICK THE PERFECT AVOCADO?
When choosing an avocado, you want them to have a slight give but still be firm. To be honest, I buy my avocados rock hard and let them ripen at home. If an avocado is squishy or has a soft spot, skip that one and go for another.
DO YOU KEEP AVOCADOS IN THE FRIDGE OR ON THE COUNTER?
Both! While the avocado is ripening, I keep it on the counter. To speed up the process, you can place them next to a banana or in a brown paper bag for a couple of days. Once the avocado is ripe, I keep them in the refrigerator.
HOW DO YOU KEEP LEFTOVER AVOCADO FROM BROWNING?
When I only use half an avocado, I use the half that does not have the seed attached to it. Then, I squeeze a little lemon juice on the half with the seed and place it in a container in the refrigerator. Once opened, try to use the second half within a day or two.
Ok… now here’s five ways to take your Avocado Toast to the next level.
HOW TO MAKE AVOCADO TOAST #1: Protein Style With Eggs
This was my favorite avocado toast to date. My MIL mails us sliced sourdough bread from Sacramento Baking Company a couple times a year. It’s my all-time favorite bread, as it reminds me of where I grew up. I went ahead and topped it with smashed avocado, sliced tomato, a hard boiled egg, feta, chives, sea salt, everything but the bagel seasoning and Korean chili flakes. YUM.
HOW TO MAKE AVOCADO TOAST #2: Lox and Loaded
Traditionally, lox are served at breakfast or brunch parties with bagels. Try switching things up at your next get together by grabbing your favorite seeded bread, and then top it with cream cheese, lox, fresh dill and mustard micro greens. Sometimes I even sprinkle them with chia seeds for extra oomph.
HOW TO MAKE AVOCADO TOAST #3: Figgin’ Out
When in season, I absolutely LOVE figs. Fig season is usually June – October, so enjoy them while they’re available! Sliced figs on top of smashed avocado over toast is to die for. Try it, I know you’ll love it. Added Bonus: Try making my Fig and Almond Coffee Cake or display them on Cheese Boards with various charcuterie. Delish!
HOW TO MAKE AVOCADO TOAST #4: Buffalo Smashed Chickpeas (yes, please)
I’m a HUGE fan when it comes to Franks Red Hot Sauce. I use it on Wings (here are my air fryer and grilled versions), in my Buffalo Chicken Pasta… and now I’m obsessed with Buffalo Smashed Chickpeas. First, drain a can of chickpeas and place them in a bowl. Next you’ll add 1 – 2 tablespoons of Frank’s Red Hot Sauce (depending on your heat preference) and smash everything together with a fork. To make the toast, simply spread the smashed chickpeas on your favorite toasted bread (I used Dave’s Killer Bread this time) and then top with a sliced avocado, everything but the bagel seasoning, Korean chili flakes and freshly sliced green onion. Boom!
HOW TO MAKE AVOCADO TOAST #5: With Cherries On Top
Cherries are another fruit I often ate while living in California. Similar to avocados, they were dirt cheap… often sold on street corners from local farmers. I’ve talked about this sweet-and-savory combo waaaay back in 2016. It is simply smashed avocado on top of toasted bread with cherries and chia seeds on top. Sometimes I’ll even add a little sprinkle of feta. Simple and delish!
- 1 Slice Of Your Favorite Bread, toasted
- ½ Large Avocado, sliced or smashed
- 1 tsp. Freshly Squeezed Lemon Juice
- Salt + Black Pepper, to taste
- Toast bread to your desired toasty-ness.
- Slice avocado in half and sprinkle with lemon juice. Next, you'll either smash it up in a bowl or cut it into slices.
- Sprinkle with salt and pepper, to taste, and then build your spectacular piece of avocado toast with the options listed above.
- Enjoy immediately (and repeat, if necessary). 🙂
