INGREDIENTS FOR SWEET AND SOUR MEATBALLS:
FOR THE MEATBALLS:
- 92% Springer Mountain Farms Ground White Meat Chicken: I personally prefer to use the 92% over the 99% fat free because it needs that extra fat content to stay moist.
- Yellow Onion: Adds an aromatics you can build on with other flavors.
- Garlic Cloves: Because pretty much every savory recipe should include garlic!
- Seasoned Panko Bread Crumbs: I like to use panko over Italian bread crumbs to add a bit of texture. Regular panko bread crumbs will work here, but I like the seasoned ones for an extra kick of flavor.
- Egg: Needed as a binder for the meatballs.
- Heavy Cream: Ground chicken is a lot leaner than other proteins, so we add this to help them be moist, flavorful, and not dry out while baking.
- Salt + Pepper: Cuz… duh.
- Worcestershire Sauce: Adds a little depth and that special little touch that makes you guess… “what’s that yumminess?” at first bite. Just a splash, if you overdue it the end result isn’t as refreshing.
- Cilantro: Optional for an herby bright finish.
TO MAKE SWEET & SOUR SAUCE:
- Olive Oil: Needed for sautéing the garlic. Feel free to use any neutral oil you prefer.
- Garlic Cloves: Always need garlic.
- Brown Sugar: Adds just the right amount of sweetness.
- Pineapple Juice: Brown sugar’s best friend for a burst of flavor.
- Yellow Mustard: I like the little bit of zip this adds. It’s not 100% mandatory but I personally enjoy it.
- BBQ Sauce: Compliments the sweet flavor profile and adds a bit of depth.
- Soy Sauce: Adds a little umami without overpowering the sauce.
