If you’ve ever wondered how to make smashed potatoes, I’ve got you covered. Crispy on the outside and perfectly cooked in the middle, this air fryer version will be your new go-to!
It’s hard not to play favorites, but when it comes to side dishes, potatoes are simply spectacular. Cover them in a sprinkle of salty, melty, manchego cheese and dunk them in my just-spicy-enough harissa aioli. Hello, flavor explosion!

INGREDIENTS FOR THIS RECIPE:
FOR THE SMASHED POTATOES:
- Baby Yellow Potatoes
- Olive Oil
- Ground Cumin
- Salt
- Paprika
- Garlic Powder
- Manchego Cheese
- Chives (optional garnish)
FOR THE AIOLI:
- Mayonnaise
- Garlic Clove
- Harissa
- Lemon Juice
DIRECTIONS FOR HOW TO MAKE SMASHED POTATOES:
- Fill a large pot with cold water and add potatoes along with a pinch of salt.
- Bring potatoes to a boil and cook over medium heat for approximately 15 minutes. Cooking time might vary slightly based on the size of your potatoes, but you should easily be able to pierce them with a fork.
- Drain potatoes and allow them to cool.
- Using the back of a spatula, press down gently on the potatoes, creating a disk shape. Place on air fryer rack and repeat with remaining potatoes.
- Place olive oil in a small bowl and mix together with salt, cumin, paprika, and garlic powder. Drizzle the olive oil mixture over the potatoes.
- Air fry for 10 minutes total, switching the racks halfway through for even cooking.
- During the last 2 minutes, top each smashed potato with grated Manchego cheese.
- Garnish with additional cheese and chopped chives and serve immediately with harissa aioli.

NOTES ON THIS RECIPE:
- This recipe was written using my Instant Pot Vortex Air Fryer. Times and temperatures may vary using other brands of air fryers. Since my air fryer has double-racks, I do not need to flip or shake the ingredients. If you are using a basket air fryer, you may need to do so.
- If you don’t have an air fryer, these can easily be made in the oven. Rather than arranging on the air fryer trays, arrange on a baking sheet and bake at 400 for 15-20 minutes. Broil for the last 2-3 minutes for additional crispiness and color.
