Juggling 50 things at once is sorta a talent that every mom inevitably learns how to navigate. Right now our household is right in the thick of it… 7am bus pickup, after school activities like taekwondo and soccer, to evening homework… dinner is the last thing on my mind some days. Enter these easy-peasy, please-everyone-at-once, protein packed rice bowls. There’s no need to stop for take-out when you can have these babies on the table in a jiffy. INGREDIENTS FOR THIS RECIPE:
My kids are obsessed with Springer Mountain Farms frozen Chicken Breast Chunks and Strips, so I figured I might as well utilize them in a “elevated” dinner the entire family would enjoy. Incorporating this glaze takes these up a notch, transforming this rice bowl into a restaurant-quality meal that tastes fantastic.
GARLIC HONEY GLAZE:
- Liquid Aminos (or Low Sodium Soy Sauce)
- Toasted Sesame Oil
- Fish Sauce, optional
- Chili Garlic Sauce
- Lime
- Honey
- Garlic Cloves
- Black Pepper
FOR THE BOWLS:
- Springer Mountain Farms Chicken Chunks or Strips
- Jasmine Rice
- Chicken Stock
- Chicken Bouillon
- Broccoli
- Cilantro
- White Sesame Seeds
This recipe is totally customizable. Want it sweeter? Add more honey. Want it spicier? Add more chili garlic sauce! Per the usual, I encourage you to adjust for your own family’s tastebuds.

Super Easy Crispy Garlic Honey Chicken Rice Bowls
Ingredients
GARLIC HONEY GLAZE:
- 1/3 cup Liquid Aminos (or low sodium soy sauce)
- 1 tbsp. Toasted Sesame Oil
- 2 dashes Fish Sauce, optional
- 2 - 3 tbsp. Chili Garlic Sauce, according to spicy preference
- 1 Lime, juiced
- 2 tbsp. Honey
- 3 Garlic Cloves, grated or minced
- 1 tsp. Fresh Cracked Black Pepper
FOR THE BOWLS:
- 16 Springer Mountain Farms Chicken Chunks
- 2 cups Jasmine Rice
- 1 tbsp. Butter
- 3 cups Chicken Stock or Broth
- 1 tbsp. Chicken Bouillon, optional
- 2 Broccoli Crowns, cut into florets
- Cilantro, chopped for garnish
- White Sesame Seeds, for garnish
Instructions
- Mix all ingredients for the garlic honey glaze in a bowl or mason jar. Set aside.
- Add the jasmine rice to a large stockpot with the butter, chicken stock, and optional bouillon. Bring to a boil and cook according to packaged directions - usually about twenty minutes covered.
- Preheat the oven to 425F. Place the chicken chunks on a baking sheet, at least 1-inch apart. Bake for 16 minutes, or until golden brown and the internal temperature is at least 165F.
- While the rice and chicken cook, add the broccoli to a stockpot with a steamer basket. Steam with the lid on for about 10 - 15 minutes, or until fork tender.
- Remove the chicken once crispy and toss together with the garlic honey glaze. Portion out the rice and broccoli among four bowls and top with the garlic honey chicken. Serve with any additional glaze, then garnish with cilantro and white sesame seeds. Enjoy immediately.
NOTES ON THIS RECIPE:
- While the fish sauce is totally optional for the glaze, it does add a subtle umami flavor that it lovely. Trust me. Just be careful not to use too much, just one or two quick dashes… which I’m guessing is between a 1/2 to whole teaspoon. Doesn’t take much.
- I use three tablespoons of the chili garlic sauce, but you could also swap this out (and adjust the measurements) for gochujang, or your favorite asian-type hot sauce.
- Jasmine rice doesn’t use as much liquid as other types of rice, so be sure to check the packaging of the rice you’re using for the exact rice to liquid measurements. While I like to use chicken stock or broth for extra flavor, you can also substitute that with water. The chicken bouillon is a nice kick of flavor / salt, but again, not required.
- Sometimes I’ll mix the chicken with the sauce and then place it back on the sheet pan to bake for another 5-ish minutes, so the sauce caramelizes to the chicken chunks. Totally optional, but when I have some extra time, I’ll do this to create some extra depth of flavor.
