A grilled burger patty with vinegary kimchi, spicy jalapeños, and crunchy ramen slaw. Oh, and they’re also slathered with spicy mayo, which hugs both sides and holds all the flavors together.

INGREDIENTS FOR KIMCHI BURGER SLIDERS:
These burgers have a solid mix of sweet, sour, and spicy… the ultimate trifecta. First up, you’ve gotta whip up an easy and simple crunchy ramen slaw dressed with a soy vinaigrette.
FOR THE CRUNCHY RAMEN SLAW:
- Ramen
- Sesame Seeds
- Slivered Almonds
- Bagged Cabbage or Slaw Mix
- Green Onions
- Canola Oil
- Soy Sauce
- Rice Vinegar
- Sugar
FOR THE BURGERS:
- Ground Beef
- Dried Ginger
- Garlic Powder
- Onion Powder
- Salt and Pepper
- Slider Buns
- Kimchi
- Jalapeños
GOCHUJANG CHILI MAYO:
- Mayonnaise
- Gochujang Chili Sauce
HOW TO ASSEMBLE KIMCHI BURGER SLIDERS:
Serve these at your next friendly or family gathering and you’ll be the star of the party. Seriously, these are so dang tasty!
CRUNCHY RAMEN SLAW:
- Crush the uncooked ramen noodles and add those to a skillet with the almonds and sesame seeds. Brown in 1-2 tablespoons of canola oil over medium to low heat, making sure not to burn. Set aside.
- In a large bowl, add slaw mix and sliced green onions.
- Heat a small saucepan over low and add soy sauce, canola oil, sugar, and rice vinegar. Cook for several minutes until sugar is fully dissolved. Allow it to cool.
- Add the crunchy ramen mixture to the bowl and top with dressing.
SLIDER BURGERS:
- Mix ground beef with spices until well combined.
- Form ball with 2-3 tablespoons of ground beef mixture and then flatten into burger patty.
- Cook over medium high heat in grill pan or griddle for 3-4 minutes per side.
CHILI MAYO:
- Mix the mayo and chili sauce until combined.
Now it’s time to build a kimchi burger! Smear a nice dollop of mayo on both sides of the bun. Layer the bottom bun with your burger, a few pieces of kimchi, a few slices of jalapeños, and top with a solid heap of your ramen slaw.

NOTES ON THIS RECIPE:
- If you’re planning on making the crunchy ramen slaw ahead of time to cut down on prep, hold off on dressing it. You can store the dressing and remaining ingredients separately in the fridge until you’re ready to eat!
- Kimchi and Gochujang can both be found in the international section of your grocery store near other Asian items. If you can’t find the Gochujang at your store, any other hot sauce will sub well in this recipe.
- If your slider buns come without sesame seeds, but you’d like to add them, simply brush them with a bit of melted butter and sprinkle the seeds on top – I love the additional texture!
