A Slice Of Our Week: 2025 Dinner Meal Plans – Week 3

Onto a cooler start to week 3, so here’s 6 toasty dinner meal plans to keep our bellies warm and satisfied.

DELICIOUS DINNERS TO GET YOU THROUGH THE WEEK:

Packed with flavor, yet simple enough to whip up on a weeknight, here are some recipes I’m in the mood for this week. If you make one of these wonderful meals, please tag me on Instagram so I can follow along!

Potato and Leek Soup

SUNDAY: Super Comforting Potato and Leek Soup.I absolutely heart making soup from scratch. There’s something particularly special about gathering ingredients in my kitchen and making something so cozy and delicious. Serve with my Cheddar and Chive Sausage Biscuits on the side, trust me… this is such a grand combo.

Mojo Chicken

MONDAY: Cuban Mojo Chicken with Charred Scallion Chimichurri. My take on this flavorful meal is a citrusy glazed entree that is baked to perfection, then garnished with red onions and cilantro. I like to serve mine with rice, black beans, homemade chimichurri, and lime wedges for extra zip.

Mexican Rice Casserole

TUESDAY: One Pan Mexican Rice Casserole with Ground Beef.There’s a little bit of this, a little bit of that… and I often refer to these one-skillet wonders as “kitchen sink” meals. Cheesy, savory, super fulfilling, and incredibly easy to make… your entire crew will love this.

Mushroom Ramen

WEDNESDAY: Creamy Mushroom Ramen with Brown Butter Chicken. This ramen dish is straight up full of flavor. Packed with protein, it’s the perfect meal to satisfy the whole fam!

Baked Tortellini

THURSDAY: Pizza-Inspired Baked Tortellini. Baked tortellini is an indulgent situation to begin with, but add some extra cheese, pepperoni, peppers, and olives on top and it is NEXT level.

Italian Sub

FRIDAY: Meatball and Italian Sub Sandwiches. Hello Friday night! Here we’ve got two classic sandwiches mashed together to create one epic recipe. I opted for Chicago style, with peppers, giardiniera and all the frills of a cravable Italian sub.
