One-Sheet Dinner: Sausage, Peppers, and Onions

Everyone needs an easy sheet pan dinner in their recipe rolodex. Incredibly easy, Whole30 friendly and 100% satisfying.

I’d have to say, one of my favorite vegetables is the bell pepper. They are so versatile and can be used in so many dishes. I honestly could eat them on a daily basis. Bell peppers compliment the flavors of a variety of ingredients from various dips like my Quick & Easy Black Bean Salsa to Classic Chili that everyone craves from time to time.

After a busy day at the office, I am looking for a dinner that’s quick, flavorful and minimal clean-up. This sheet pan dinner ensemble is ultra delicious on its own, stuffed in a hoagie, or piled on top of a bowl of freshly made Zucchini Noodles (aka Low Carb / Whole30 Heaven).

These are raw, unedited photos from when I was prepping our meal. They have not been enhanced to “look pretty”, but are simply on here for those of you who enjoy photos of each step of the way. Enjoy!


Preheat oven to 400F & line a rimmed baking sheet with Aluminum Foil.

Sheet pan with foil meal prep.

Slice Sausages & Vegetables and place them into the baking sheet.  

Sheet pan with chopped vegetables and sausage.

Sprinkle with S+P and drizzle with Olive Oil and then mix it up. Cook for 20 minutes. Remove sheet from oven and stir, making sure to move all items around (this ensures everything browns evenly). Cook for another 20 minutes & remove from oven. Plate and enjoy immediately.

Sheet Pan Dinner


One-Sheet Dinner: Sausage, Peppers, and Onions

Serves: 4
Ingredients
FOR THE SHEET PAN:
  • 4 Sausages of Choice, sliced
  • 2 Red Bell Peppers, sliced
  • 1 Yellow Bell Pepper, sliced
  • 1 Orange Bell Pepper, sliced
  • 1 Sweet White Onion, thinly sliced
  • Salt + Pepper, as desired
  • Olive Oil, as needed
GARNISH AND SERVING SUGGESTIONS:
  • Sesame Seeds
  • Fresh Cilantro
  • Lemon Slices
  • Hot Sauce
  • Coconut Aminos
Instructions
  1. Preheat oven to 400F.
  2. Line a rimmed baking sheet with Aluminum Foil.
  3. Slice Sausages & Vegetables and place them into the baking sheet.
  4. Sprinkle with desired amount of salt, pepper, and olive oil,
  5. Bake for 20 - 25 minutes, stirring halfway through.
  6. Remove from oven, plate, and enjoy immediately with garnish and serving suggestions.

NOTES ON THIS SHEET PAN DINNER:

  • I used Aidells Chicken Apple Sausage and avocado oil instead of olive oil because that makes this Whole30 compliant. 
  • I served ours over white rice (for my husband) and on top of Zucchini Noodles (for me). Cauliflower Rice would also be a great Whole30 option. 
  • The Citrus is EVERYTHING here – make sure to squeeze lemon or lime wedges on entree before eating. Personal note: did you notice some of my lemon rind is missing? I like to have a cocktail while cooking and I used the rind to garnish my Beefeater Gin Martini. 🙂
  • Store any leftovers in an airtight container, refrigerated, and consume the next day as a meal prepped lunch!
