Protein-packed, creamy fettuccine noodles with a twist. This dish is so incredibly flavorful, I know you’re gonna love it.
If you’ve been to my little corner of the internet before, you know I love making fusion meals. Take a little bit of this, a little bit of that, and the flavor combo turns out so perfect. INGREDIENTS FOR THIS RECIPE:
While I chose to use fettuccine noodles, any shape of pasta will work in this recipe. I pretty much always have fettuccine on hand, so that’s what we went with! Here’s everything you’ll need:
- Springer Mountain Farms Chicken Breasts
- Salt + Black Pepper
- Olive Oil
- Fettuccini Noodles
- Shallot
- Garlic Cloves
- Mushrooms
- White Miso Paste
- Kimchi
- Heavy Cream
- Pasta Water
- Parmesan
- Cilantro
- Chives
- Sesame Seeds
While the miso paste isn’t mandatory, it adds a little umami flavor to the sauce… which is seriously delightful.
ADDITIONAL INGREDIENT IDEAS:
While I love this recipe “as is”, you could also add some crushed peanuts for extra crunch. If you’re trying to eat more veggies, some sautéed broccolini, red peppers, or bok choy would be tasty additions. A soft-boiled egg isn’t a bad idea either! Depending on how many extra ingredients you add, you may have to increase the amount of sauce to accommodate. This is a mild-spicy type of dish, but if you prefer some heat feel free to use spicy kimchi, add a drizzle of sriracha, mix-in a dollop of gochujang, or serve with red pepper flakes.

- 2 Chicken Breasts, diced into chunks
- 1 tsp. Salt
- 1 tsp. Black Pepper
- 2 tbsp. Olive Oil, divided
- 1 lb. Fettuccini
- 1 Shallot, minced
- 4 oz. Mushrooms, chopped (1 cup)
- 1 cup Kimchi
- 1 tbsp. White Miso Paste
- 4 Garlic Cloves, minced
- 1.5 cup Heavy Cream
- ½ cup Pasta Water
- 1 cup Grated Parmesan
- ½ cup Chopped Cilantro
- 5 oz. Chives, chopped
- Sprinkle of White Sesame Seeds
- Dice the chicken breasts into 1-inch chunks, then season with salt and black pepper. Add olive oil to a large skillet over medium-high heat. Sauté the chicken until internal temperature has reached 165F, then remove from the skillet and set aside.
- Boil the fettuccini noodles according to packaged directions for al dente.
- While the noodles are boiling, add the shallot, chopped mushrooms, and kimchi to the same large skillet over medium-high heat. Sauté for 5 - 6 minutes, then add the miso paste and garlic. Continue to sauté until fragrant (about 1 minute).
- Pour in the heavy cream, pasta water, and parmesan into the same skillet. Whisk with a large spatula until combined. Allow the sauce to simmer for 2 - 3 minutes, or until slightly thickened.
- Add the cooked pasta to the large skillet and mix to combine. Before serving, sprinkle with cilantro, chives, and sesame seeds. Enjoy immediately.
NOTES ON THIS RECIPE:
- While I used chicken breasts in this recipe, you could substitute them with thighs as well. Both are super tasty! Springer Mountain Farms has always given their chickens the best available.
