It’s almost time for the back-to-school hustle ‘n bustle! So… a quick and flavorful dinner recipe is exactly what every parent needs. Am I right? Other ” hurry and get food on the table” recipes include this 30-minute Thai Chicken Pizza, my Grilled Sesame Ginger Chicken with Scallions, and these Peanut Sesame Noodles.

INGREDIENTS YOU’LL NEED:
This recipe is pretty straight forward and you can whip it all together in just under a half hour. Yaaaaas!
FOR THE KATSU CHICKEN:
- Flour
- Eggs
- Kosher Salt
- Black Pepper
- Seasoned Panko Breadcrumbs
- Springer Mountain Thin Sliced Boneless Skinless Breasts
- Cooking Spray
RECOMMENDED SERVING:
- White Sesame Seeds
- Freshly Chopped Cilantro
- Sliced Green Onions
- Tonkatsu Sauce
- White Rice or Cabbage Salad

CAN YOU BAKE OR FRY KATSU CHICKEN?
Of course! I’m totally flexible when it comes to cooking methods. Do whatever works for you and your family best!
TO BAKE: you will want to pre-toast the Panko ahead of time. This will ensure that it still has that nicely browned color and texture. Simply follow the same directions as below, but place the chicken on a wire rack lined baking sheet in a 400F oven. Cook for 20 – 25 minutes, or until the chicken reaches 165F.
TO DEEP FRY: I prefer to cook mine in peanut oil, as I believe it produces the best flavor. Preheat the oil to 340F, and depending on your pot size, you may need to fry each piece one at a time. Deep fry until both sides are golden, between 3 – 5 minutes total.

- ½ cup Flour
- 2 Eggs, beaten
- ¼ tsp. Salt
- ¼ tsp. Black Pepper
- 2 cup Seasoned Panko Breadcrumbs
- 1.5 lb. Springer Mountain Thin Sliced Boneless Skinless Breasts
- Cooking Spray, optional
- White Sesame Seeds
- Freshly Chopped Cilantro
- Sliced Green Onions
- Tonkatsu Sauce
- White Rice or Cabbage Salad
- Preheat air fryer to 400F.
- Place the flour, beaten eggs, and seasoned panko in three shallow plates. Season the eggs with salt and pepper.
- Dredge each thinly sliced breast in the flour, then eggs, then coat in seasoned panko. Repeat, as needed.
- Place the slices on the air frying racks, making sure not to overlap. Spray with cooking oil, if desired. Air fry for 8 – 10 minutes, making sure to flip chicken halfway through.
- Remove from the air fryer and slice the chicken into bite-sized pieces. Serve with recommended garnishes over white rice and/or cabbage salad.
NOTES ON THIS RECIPE:
- Cooking times will vary, depending on which air fryer you are utilizing and how thick the chicken breasts are cut. You may have to work in batches when using a basket air fryer instead of racks.
- I do not recommend regular or Italian breadcrumbs for this recipe, as they won’t achieve the crispy results of a traditional Katsu chicken. Stick with Panko. 😉
- Always rest on a wire rack, either on the counter or in the oven on a low temperature to keep warm. Placing directly on the baking sheet will result in a soggy bottom.
