Quick, easy and super addicting… this taquitos recipe will be your go-to appetizer for weekend gatherings, game day or even a light dinner!
Flour tortillas turn into a crunchy, savory shell that adds a nice texture to the spicy filling made of chopped meatballs, buffalo sauce, and a blend of two cheeses. Roll ’em up, pop them in the oven and enjoy all the spicy, melty cheesy smells while they bake. Need more snack inspo? TASTY TAQUITOS RECIPE INGREDIENTS:
I absolutely love anything smothered in buffalo sauce… and these roll-ups taste absolutely marvelous. Enjoy them on their own or serve with your favorite dipping sauce!
FOR THE TAQUITOS:
- Original Simek’s Beef Meatballs
- Pepper Jack Cheese
- Blue Cheese Crumbles
- Your Favorite Buffalo Sauce
- Soft Taco Sized Flour Tortillas
TO GARNISH:
- Sour Cream
- Serrano Pepper Slices
- Fresh Cilantro and Chives
- Pico de Gallo
- Guacamole
As a busy mom of two wild boys, I am always looking for shortcuts that save me time in the kitchen. Simek”s Meatballs make cooking a breeze. HOW TO MAKE HOMADE TAQUITOS:
- Microwave the meatballs according to package directions. Once cooked, allow them to cool slightly before chopping them into smaller pieces.
- Preheat the oven to 400F. While you wait for the oven to come to temperature, shred the Pepper Jack cheese and mix it with the meatballs, blue cheese crumbles and buffalo sauce in a large bowl.
- Warm the tortillas until they’re pliable. You can do this in the oven on a parchment-lined baking sheet or wrapped with paper towels in the microwave.
- Fill each tortilla with the meatball filling and roll into a taquito shape. Be careful not to overfill.
- Spray a parchment-lined baking sheet with cooking spray, then place the taquitos seam side down in a row. Spray the top of the taquitos with a spritz of cooking spray and pop them into the oven.
- Bake for 18 – 20 minutes, or until your desired golden-brown color. Top with suggested garnishments and serve immediately.
USEFUL TIPS AND TRICKS:
- SHRED YOUR OWN CHEESE. While pre-shredded cheese will certainly work in this recipe, the flavor and texture of freshly grated cheese takes this recipe to the next level.
- WARM THE TORTILLAS. This will allow you to easily fold them around the filling in the center without cracking.
- WANT LESS HEAT? Substitute the buffalo sauce with your favorite barbecue sauce.

NOTES ON THIS RECIPE:
- I use olive oil cooking spray for the sheet pan and on top of the taquitos. You could also use melted butter if you don’t have cooking spray on hand.

- Want to freeze these for an easy appetizer later? Simply follow the directions through baking (do not add the garnishments). Allow them to cool slightly and place them, single file, in a freezer-safe bag. They can be frozen up to a month. When you’re ready to enjoy, bake them in a 375F oven until warmed, about 25 – 30 minutes. If they are browning too quickly, loosely place a sheet of aluminum foil on top halfway through baking.
