Aji Amarillo Sauce is a staple ingredient for Peruvian cooking.
I use this sauce on EVERYTHING… you name it, it goes well with it.
Aji Amarillo sauce can be found at your local Latin/Mexican market. This chili-based sauce has medium heat and tastes terrific on just about everything (Did I mention that already? I did? Well, I mean it.)
Ingredients:
- 2 tbsp. Aji Amarillo Paste
- 1/2 cup Mayonnaise
- 3 tbsp. Lime Juice {about the juice of half a Lime}
- Salt, to taste
Directions:
- Whisk all ingredients in a medium sized bowl until well combined. Add Salt and/or more Aji Amarillo Paste, to taste, and serve immediately.
- Refrigerate any leftover sauce in an airtight container for up to 5 days. Mix together before serving again.
Note: You can substitute the mayonnaise for Greek yogurt or sour cream. Traditionally, this sauce also has queso fresco cheese {Mexican crumbly cheese} but I’m trying to keep things simple here and this recipe is fantastic the way it is. If you want to add a little lime zest, that goes well too!
