Sweet Potato Jalapeño Hash & Eggs

This is our favorite Sweet Potato Hash recipe.

Trust me, you’ll want to make for breakfast every weekend.


Sweet Potato Hash

Ingredients: 

  • 1 sweet potato, grated
  • 1/2 onion, finely chopped
  • 1 jalapeño, seeded and chopped
  • 1 clove of garlic, minced
  • 2 eggs, cooked sunny side up
  • 1 tsp olive oil
  • 2 tbsp green onions, chopped
  • S + P to taste

Directions: 

  1. In a large skillet over medium heat, saute the Sweet Potato, Onion and Jalapeño with Olive Oil. You will saute this, covered, for about 10 minutes or until the Potatoes are cooked through.
  2. Once cooked, uncover, add Garlic and sauté for 5-6 minutes until browned.
  3. In a separate pan, cook the Eggs according to your preference. I prefer sunny-side-up for this recipe, but you can cook your eggs whichever way you like.
  4. Top with green onions. Plate & Enjoy.
