I’m a huge fan of paneer cheese. It’s so versatile and I love the way it holds up as the main protein in sandwiches. Seriously, so grand.
As I’ve mentioned in previous blogs, I cook so much during the week that I often feed a few of my neighbors. If you’ve never tried paneer cheese you’re seriously missing out. It’s similar to halloumi or bread cheese, but has a slightly different distinct flavor. One of my neighbors is vegetarian, so this recipe is for her! INGREDIENTS FOR THIS RECIPE:
If you’ve been to my little corner of the internet before, ya’ll know I heart of sandwiches. This one here is piled high with all the good stuff. You’ll need:
CILANTRO CHUTNEY:
- Garlic Clove
- Avocado Oil
- Ginger Puree
- Red Onion
- Pepita Seeds
- Sugar
- Cilantro
- Sombal Chili Paste
- Salt
- Cumin
- Lemon
- Water
FOR THE SANDWICH:
- Ciabatta Loaf
- Green Chutney (from above)
- Mayo
- Avocado
- Lettuce
- Royal Mahout Paneer Cheese
- Cucumber
- Pepperoncini
- Tomato
- Salt + Black Pepper
The Cilantro Chutney is a total game changer here. While I used sombal chili paste because that’s what I had on hand, you could also substitute that with fresh jalapeños, green chilies, or another pepper that you prefer.
HOW TO COOK PANEER CHEESE:
You can enjoy paneer cheese raw, but I personally prefer to warm the slices up in a skillet. It’ll keep its shape but form a slight crust on the outside. Simply slice it and place in a medium heat skillet and pan fry with a little avocado oil. You could alternatively slice the cheese into cubes and air fry them until crispy on the exterior. I absolutely love these for veggie sandwiches, but you could also serve them in wraps, a base for tacos, or even add it to Pad Thai!

- 1 Garlic Clove
- 1 tbsp. Avocado Oil
- 1 tbsp. Ginger Puree
- ¼ Small Red Onion
- 2 tbsp. Pepita Seeds
- ½ tsp. Sugar
- 1 bunch Fresh Cilantro
- 1 tbsp. Sombal Chili Paste
- ¼ tsp. Salt
- ½ tsp. Cumin
- Juice of ½ Lemon (about 2 tbsp.)
- Water, as needed for consistency preference
- 12 oz. Paneer Cheese, sliced into ½ inch strips
- 1 tbsp. Avocado Oil
- 1 Ciabatta Loaf, toasted
- 4 -6 tbsp. Green Chutney, to taste
- 4 tbsp. Mayo
- 1 Avocado, sliced
- 1 cup Shredded Lettuce
- 8 Cucumber Slices
- Sliced Pepperoncini’s, to taste
- 4 Tomato Slices
- ½ tsp. Salt
- ½ tsp. Black Pepper
- TO MAKE THE CHUTNEY: Simply place all ingredients into a food processor and pulse until smooth. Add water, as needed, to thin the chutney to desired consistency. Pour into a mason jar or sealable container and place in the refrigerator until you're ready to use.
- SEARING THE PANEER CHEESE: Pour avocado oil in a skillet over medium heat. Place the sliced cheese in the skillet and pan sear until the exterior has become slightly browned, about 5 minutes per side. Remove and place on a paper towel.
- TO ASSEMBLE THE SANDWICHES: Cut the ciabatta loaf in half, lengthwise, and toast in the oven until desired crispiness. Once toasty, slather the bottom half with green chutney and the top half with mayonnaise. Pile high with remaining ingredients, sprinkling the tomato slices with salt and pepper. Fold together, slice into 4 servings, and enjoy immediately.
NOTES ON THIS RECIPE:
- If you can’t find pepita seeds (roasted pumpkin seeds), you could alternatively use unsalted cashews, almonds, or pistachios. This will change the taste a bit, but the chutney will still be delicious.
- I love using toasty ciabatta here, but you could also use sliced white bread, sourdough, whole wheat, or whichever bread you like most!
- To avoid having any of the interior ingredients falling out when slicing, I’d suggest wrapping the assembled sandwich in wax or parchment paper before slicing into fourths. Similar to how a sandwich shop would do!
