I'm a huge fan of paneer cheese. It's so versatile and I love the way it holds up as the main protein in sandwiches. Seriously, so grand.
Serves: 4
Ingredients
CILANTRO CHUTNEY:
  • 1 Garlic Clove
  • 1 tbsp. Avocado Oil
  • 1 tbsp. Ginger Puree
  • ¼ Small Red Onion
  • 2 tbsp. Pepita Seeds
  • ½ tsp. Sugar
  • 1 bunch Fresh Cilantro
  • 1 tbsp. Sombal Chili Paste
  • ¼ tsp. Salt
  • ½ tsp. Cumin
  • Juice of ½ Lemon (about 2 tbsp.)
  • Water, as needed for consistency preference
FOR THE SANDWICH:
  • 12 oz. Paneer Cheese, sliced into ½ inch strips
  • 1 tbsp. Avocado Oil
  • 1 Ciabatta Loaf, toasted
  • 4 -6 tbsp. Green Chutney, to taste
  • 4 tbsp. Mayo
  • 1 Avocado, sliced
  • 1 cup Shredded Lettuce
  • 8 Cucumber Slices
  • Sliced Pepperoncini’s, to taste
  • 4 Tomato Slices
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
Instructions
  1. TO MAKE THE CHUTNEY: Simply place all ingredients into a food processor and pulse until smooth. Add water, as needed, to thin the chutney to desired consistency. Pour into a mason jar or sealable container and place in the refrigerator until you're ready to use.
  2. SEARING THE PANEER CHEESE: Pour avocado oil in a skillet over medium heat. Place the sliced cheese in the skillet and pan sear until the exterior has become slightly browned, about 5 minutes per side. Remove and place on a paper towel.
  3. TO ASSEMBLE THE SANDWICHES: Cut the ciabatta loaf in half, lengthwise, and toast in the oven until desired crispiness. Once toasty, slather the bottom half with green chutney and the top half with mayonnaise. Pile high with remaining ingredients, sprinkling the tomato slices with salt and pepper. Fold together, slice into 4 servings, and enjoy immediately.
