Dinner and a movie couldn’t get easier with Blue Apron’s Meal Plan Delivery! Inspired by Disney Pixar’s Luca, these dinners can’t be beat!

I’ve been obsessed with Pixar every since their very first feature film, Toy Story, was released in theaters in 1995. Go figure, it now streams on my television every day with two boys that are ages 6 and (almost) 3. Eating dinner together has always been important to me, and cooking with one another has been a new adventure. I’m LOVING it! Previously, Dylan has enjoyed being my hand model in posts. Blue Apron was kind enough to send a box to my home ahead of time so I could take my stab at creating these restaurant-quality dishes in my own kitchen. Upon arrive, I was super excited that we had THREE different meals options for the week! All of which were incredibly easy to make and extremely tasty. Seriously, my family was obsessed. The “Celebrate Luca” meals will be available the weeks of 6/14, 6/21 and 6/28:
- Week of 6/14: Dijon-Roasted Trout & Potatoes over an arugula salad, Niçoise olives and green beans.
- Week of 6/21: Calabrian Honey Pork Chops with Sicilian-style cauliflower and almonds.
- Week of 6/28: Oregano Chicken & Orzo with spinach, feta and roasted red peppers (RECIPE BELOW!).
This was our first time using Blue Apron, and it certainly won’t be our last. We were pleasantly surprised with how easy the meals were to prepare, and they even provide step-by-step photos with the direction! Not to mention, each recipe was incredibly kid-friendly. An Easy Guide To Making Chocolate Bark
Toddler-Approved Roasted Chickpeas
Super Tasty Cocoa Banana Pancakes
- 10 oz. Chopped Chicken Breast
- Olive Oil, as needed
- 3 oz. Baby Spinach
- 4 oz. Grape Tomatoes
- 2 tbsp. Tomato Paste
- 1½ oz. Feta Cheese
- 1 tsp. Whole Dried Oregano
- 4 oz. Orzo Pasta
- 2 Garlic Cloves
- 1 oz. Sliced Roasted Red Peppers
- 1 tbsp. Red Wine Vinegar
- ¼ tsp. Crushed Red Pepper Flakes
- PREPARE THE INGREDIENTS: Fill a medium pot ¾ of the way up with salted water; cover and heat to boiling high. Wash the Fresh produce, halve the tomatoes and place them in a bowl. Season with salt. Chop the garlic and roughly chop the peppers.
- COOK THE PASTA: Add the pasta to the pot of boiling water and cook, uncovered, for 7 minutes. Turn off the heat and drain throughly. Return the pasta to the pot and immediately add the spinach. Stir to combine and cover to keep warm.
- COOK THE CHICKEN & MAKE THE SAUCE: Season chicken with salt, pepper and the dried oregano. Drizzle olive oil in a non-stick pan over medium-high heat and sauté the chicken for 4 minutes, or until browned. Add seasoned tomatoes, chopped garlic, and red pepper flakes. Cook, stirring constantly, for 1 - 2 minutes. Add the tomato paste, and continue to cook for another minute. Lastly, add ¼ cup water, stir, and cook until the sauce has slightly thickened. About 1 - 2 minutes.
- FINISH THE PASTA & SERVE: To the pot of cooked pasta and spinach, add the chopped peppers, vinegar and 2 tbsp. olive oil. Stir to combine. Serve the finished pasta topped with cooked chicken and sauce. Garnish with feta cheese and enjoy!
NOTES ON THIS RECIPE:
- The red pepper flakes are completely optional. If you’re cooking with kids, you might want to skip the addition of these and serve them on the side.
