This Salsa is my favorite Black Eyed Peas Recipe.
I’ll often make a large batch and enjoy it all week.
One of my favorite things about this recipe is how much fun you can have with it. So many ideas, so many ways to mix things up!
In addition to the ingredients listed in the recipe below… add some chopped Chicken Breast and 1 cup of Greek yogurt and BOOM… you have a flavorful chicken salad.
Sub the Lemon for a Lime, serve it along-side some tortilla chips and BOOM… you have a festive salsa. The possibilities are endless… let’s get creative!
Ingredients:
- 2 cups Black-Eyed Peas, cooked & cooled (Black Beans also work well in this recipe)
- 1 Red Bell Pepper, chopped
- 1 Yellow Bell Pepper, chopped
- 1 Jalapeno, chopped
- ½ red onion, diced
- ¼ cup cilantro, chopped
- 1 tbsp. Lemon Zest
- Juice of 1 Lemon
- ¼ cup seasoned Rice Vinegar
- S+P to taste
Directions:
- Mix all ingredients together and set in the refrigerator for at least 2 hours to let flavors marry.
