These Roasted Cherry Tomatoes are savory, tangy and taste great on toast, inside sandwiches, with pasta, and more! Talk about versatility.
Tomatoes grown during North Carolina’s summer solstice taste the best! Plump, juicy and just the right amount of sweetness… man-oh-man, I look forward to them each year! (Tomato sandwich, anyone?) If you’ve moseyed around my blog before, you’ll also know how much I heart my air fryer. So much so that I even named her Susan. 😉 So when I had a plethora of ‘maters sitting on my counter last week, it dawned on me! AIR FRY THEM! YEAH BABY! Use them to spruce up a Classic Bruschetta, pile ’em up high on Grilled Cheese Sandwiches, or puree them to make a homemade sauce for my Detroit Style Pizza! Seriously, these little air fried gems are packed with so much flavor! You’ll want to make a batch every week.

ROASTED CHERRY TOMATOES INGREDIENTS:
With just a few pantry staples, this easy side dish comes together in just about 10 minutes.
- Cherry Tomatoes
- Shallots
- Sherry Vinegar
- Olive Oil
- Garlic Powder
- Dried Oregano
- Red Pepper Flakes
- Salt + Pepper
You can certainly swap out the dried herbs for different ones that you prefer. Sometimes I’ll mix in fresh ingredients like basil, parsley, rosemary or thyme. Per the usual, feel free to customize this recipe to your own liking!
EASY-PEASY… 1, 2, 3!
- Cut tomatoes in half and slice the shallot. Place them in an oven-safe bowl that will fit in your air fryer.
- Pour over the vinegar, olive oil, seasonings and mix together.
- Preheat the air fryer to 400F and cook for 10 minutes. Allow to cool slightly and serve!
MORE WAYS TO SERVE ROASTED TOMATOES:
- BREAD: These taste great on toast or crackers. I love them with ricotta, fresh basil and a smear of garlic confit. You could also use goat cheese, mascarpone, cream cheese, or plain butter with a sprinkle of freshly grated parmesan.
- EGGS: Stuff them into omelets, with spinach and feta in an egg scramble, or paired with fried eggs and crispy potatoes.
- SALADS: Over lettuce, pasta salad or even jazz up a classic egg or potato salad!
- SANDWICHES: The possibilities here are endless. Liven up panini’s, foot-long subs, or warm hoagies.
- HUMMUS: Upgrade plain hummus by piling some of these beauties on top! Add a sprinkle of fresh herbs, feta, roasted pistachios or pine nuts… BOOM. Looks fancy, but makes for a totally easy appetizer!
- GRILLED MEATS: Chicken, steak, burgers, hot dogs or even shrimp. They’re all good choices!
- THE ‘ZAA: These are a super yummy addition to any type of pizza you’re baking at home. Add them before or after cooking… tastes great both ways!

B.L.A.T. with Sundried Tomato Aioli
- 2 cups Cherry Tomatoes, cut in half
- 1 Shallot, thinly sliced
- 1 tbsp. Sherry Vinegar
- 1 tbsp. Olive Oil
- ½ tsp. Garlic Powder
- ½ tsp. Dried Oregano
- 1 tsp. Red Pepper Flakes
- ¼ tsp. Kosher Salt
- Black Pepper, to taste (optional)

NOTES ON THIS RECIPE:
- I prefer sherry vinegar in this recipe, as it adds a bit of tang. If you prefer your roasted tomatoes to be more on the sweeter side, go ahead and swap this for balsamic vinegar.
- Fresh garlic can be swapped-in for the garlic powder. I’ll often use 1 – 2 cloves, depending on size.
- Not a fan of spicy-goodness? No worries! Skip the red pepper flakes and/or black pepper.
