It’s the perfect addition to any meal: Fresh, healthy, low-calorie, and a bit spicy. What’s not to love here? Pico de Gallo is relatively easy to make; simply chop and enjoy. With no cooking required, this crowd-pleasing condiment is a great recipe for beginners in the kitchen.
When it comes to cilantro, I’m a firm believer of go big or go home.
Cilantro is my all-time-favorite-herb. Some might say I’m obsessed with it (which I totally am). I know some crazy folks out there hate the taste of it (gasp!), so feel free to adjust my heaping 1/4 cup to your own preference.
- 3 cups diced Strawberries
- 1 Mango, chopped
- ¼ cup chopped Fresh Cilantro Leaves
- 1 Jalapeño, seeded and minced
- ¼ cup diced red onion
- Juice of one Lime
- Kosher salt, to taste
- Optional: 1 teaspoon maple syrup or honey, to taste
- Combine all ingredients in a large bowl and mix well. Add salt, to taste. Serve immediately.
When I was brainstorming about what fruit would pair perfectly with strawberries, I must admit that peaches were my first choice. However, since peach season is still a couple months away… Mr. mango came to save the day. I also thought that pineapple would pair well with this too. What do you think? I’m definitely going to try both and report back ASAP.
