SUNDAY SUPPER:
This super easy Roasted Acorn Squash and Sausage Pasta is smothered in a rich white wine sauce with roasted acorn squash, parmesan, sautéed onions, garlic and herbs.
MEATLESS MONDAY:
This Fettuccine Pasta with Cauliflower Garlic Cream Sauce is so addicting. It’s made with simple ingredients and packs in an entire head of cabbage! Trust me, it is so grand!
TASTY TUESDAY:
Are you a spicy pasta fan? Take your beef stuffed shells to the next level with jalapeño peppers, caramelized onions and horseradish. You’re taste buds are going to swoon for this Spicy Beef Stuffed Shells recipe! Look at that cheese pull. 😉
WACKY WEDNESDAY:
I love cooking in the kitchen with friends. My very talented friend, Chris Coleman, came to visit to teach me his family recipe for Chicken Parmesan. Tender chicken thighs smothered in a rich, homemade tomato sauce and covered in a layer of gooey provolone cheese. Added Bonus: We’re also including a Stuffed Mushroom recipe! If you’re local to Charlotte, make sure to check-out his restaurant, The Goodyear House. Order the Goopy Burger, Cashew Mac and tell them Slice of Jess sent ya!
TOASTY THURSDAY (minus the carbs):
Let’s lighten things up tonight with this Low Carb Cabbage Lasagna. It features layers of silky cabbage tucked between spicy sausage and bubbly cheese. Trust me, you won’t even miss the noodles.
FREE-FOR-ALL FRIDAY:
Two potatoes makes a massive mound of noodles (which I like to call Poodles. If Zucchini Noodles are #Zoodles, why can’t potato noodles be #Poodles?). This Sweet Potato “Poodles” Carbonara is exactly what you need in your life. Trust me, this recipe is amazing. I hope you and your family enjoy it as well!
SASSY SALAD SATURDAY:
Talk about the best of both worlds. Next time you’re craving baked lasagna, try stuffing it into savory garlic bread with extra ooey-gooey mozzarella. Is your mouth watering yet? Serve this Lasagna Stuffed Garlic Bread with a side salad and we can still proclaim this as a Sassy Salad Saturday. 😉
WANT MORE MEAL PLANNING IDEAS?
I try to cook with my two boys as often as I can. It’s fun bonding time and I find it easier to get them to try new foods! What are some of your favorite items to cook with your kids? Let me know in the comments so I can try them out!
