Broccoli Slaw

Broccoli Slaw is an easy way to add crunch to your diet.

Add it to your favorite sandwich to get some extra zing.


Broccoli Slaw

A true crowd pleaser that you can bring to any occasion! This is my variation of cole slaw minus the fat and full of flavor! A dish that you will never feel guilty about going back for seconds!

Ingredients: 

  • 2 bunches of Broccoli (crowns & stems), finely chopped
  • 1 Carrot, peeled & minced
  • 2 tbsp Mayonnaise
  • 1/2 cup Greek Yogurt
  • 1 Lemon, zested
  • 1/4 Red Onion, chopped
  • 2 cloves Garlic, chopped
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Granulated Sugar
  • 2 tbsp fresh Parsley, chopped
  • S+P to taste

Directions:

  1. Mix all ingredients together in a large bowl.
  2. Set in refrigerator and let flavors blend for at least two hours before serving.

Note: Some yummy add-in’s include: 1/2 cup chopped Bacon, 1/4 cup Sunflower Seeds, 1/4 cup slivered Almonds and a bag of crushed Ramen Noodles.
