This seasonal peaches and cream recipe is one of the easiest, most delicious oatmeal breakfasts you’ll ever make. Sun-kissed peaches are complimented with brown sugar and velvety smooth cream cheese to create an unforgettable dish that you’ll want to devour every morning.
I’ve found that quick oats are pretty much the perfect breakfast for a busy mom.
They take less than 5 minutes to put together and even our toddler can’t get enough of them. I’ll often mix things up and play with the flavor combos when creating our AM bowl of oats. It’s fun and keeps things exciting (especially when I whip out the cookie cutters and make star-shaped apple slices).
Full disclosure: my son and I have consumed this exact same savory-sweet recipe for the past three mornings straight. It’s THAT spectacular.
To add some extra nutrients, I threw some chia seeds into the pot.
These little superfood buds are not required, but they provide a bit of texture contrast that we really enjoy. Personally, I’m a fan of thicker oatmeal, so the chia seeds help absorb any excess milk that’s leftover. Sometimes we also add shredded zucchini into the mix (but since I didn’t have any on hand, we skipped it this time around).
We topped ours with sliced almonds, hemp hearts and a touch of honey. Feel free to enjoy this dish as is, or add whatever toppings you desire.
I’d like to send a special thank you to Titan Farms in South Carolina for surprising me with a bushel of their juicy peaches. With over 6,000 acres of trees, this family-owned operation grows more peaches than the entire state of Georgia (they’re the largest peach grower on the East Coast)! They are located in the breathtaking Old 96 District, which boasts over 100,000 acres of picturesque waterways, 150+ miles of outdoor trails and a number of historic landmarks.
- 2 Peaches, roughly chopped
- 2 tbsp. Butter
- 1 tbsp. Brown Sugar
- 2 cups Quick Oats
- 1.5 - 3 cups Milk (depending on your thickness preference)
- 1 tbsp. Chia Seeds
- 2 tbsp. Cream Cheese
- Sliced Almonds
- Hemp Hearts
- Additional Fresh Fruit
- Local Honey
- Add peaches, butter and brown sugar to a pot over medium heat. Sauté for 1 - 2 minutes.
- Pour in desired amount of milk along with the chia seeds and cream cheese, then bring to a boil. Add quick oats and continue to simmer on low heat, mixing sparatically, until milk is absorbed. This usually takes about 4 minutes.
- Serve with desired toppings and enjoy.
Jess Notes:
I prefer my oatmeal to be thick and hearty, so my liquid to oats ratio is far less than what others might prefer. If you favor the traditional version, add more milk (or water) until you’ve reach your desired consistency. Please note that the peaches will give off excess liquid as they cook, so just make sure to keep that in mind.
