Are you struggling with a food-on-the-floor… not in-the-mouth scenario? Toddlers can be pretty fussy when it comes to mealtime, but fear not mama-friends. I’ve got the perfect solution to your mid-morning scuffle.
When it comes to creating successful breakfast ideas for toddlers, it can often be a hit or miss.
Trust me, I know from experience. We’ve had some pre-lunch victories though, including my superfood breakfast bowls, pumpkin rice bites and avocado toasts with cherries.
These Cocoa Banana Pancakes are incredibly easy to make, and ready in a cinch. Did I mention that your child will devour them because they are convinced it’s a plate full of chocolate? However, don’t fret… there’s plenty healthy components included in this stack of goodness too!
Bananas are a fantastic fruit to introduce to your child at an early age. They’re jam-packed with potassium and generally easy for tiny tummies to digest. This recipe works great with the first two ingredients only and are often referred to as “paleo pancakes”. Though, I’ve found that adding the cocoa powder bumps this dish to the next level of awesomeness. Honestly, this is the world’s easiest pancake recipe and you’ll find yourself making them quite often.
Added Bonus: Mom + Dad like eating them too.
Dylan is obsessed with peanut butter, so we often add a drizzle on top with a touch of powdered sugar. However, the topping opportunities here are endless. We have also enjoyed ours with diced strawberries, sliced almonds or traditional maple syrup. Fell free to play with the flavor profiles here until you find what your child admires most.
Here’s the base recipe for roughly 6 kid-sized pancakes.
INGREDIENTS:
- 1 Banana
- 2 Eggs
- 1 tbsp. Cocoa Powder
- Butter, as needed for frying
DIRECTIONS:
- Mash banana in a large bowl with a fork.
- Add eggs and whisk together (with the fork) until well combined.
- Cook in a frying pan over medium-heat with a small dab of butter. Make sure to flip after 1 minute or so.
- Enjoy immediately with desired toppings.
Add some extra pizazz by including some of these ingredients in the batter:
- 1 tsp. Cinnamon
- 1 tsp. Vanilla Extract
- 2 tbsp. Pumpkin Puree
- 1 tbsp. Flax Seeds
- 1 tbsp. Coconut Flakes
