It’s Super Bowl Sunday and the forecast in Charlotte is calling for 100% rain the entire day.
I’ve always been a big fan of stormy days… cozying up by the fire with a great book and a mug full of hot cocoa (or perhaps a daytime cocktail). Pure bliss. However, this relaxing image is no longer a reality with an energetic toddler bouncing off the walls (literally).
In order to keep our two-and-a-half year old busy (and save my own sanity), I decided to teach him how to make a toddler-friendly Chex mix recipe that we could enjoy during tonight’s football festivities. Dylan loves to help me in the kitchen, so this seemed like a good way to keep him entertained until nap-time. After breakfast, we strapped on our rain gear and headed out to gather our ingredients at Target.
I’ll usually let Dylan hold the shopping list and pick out our ingredients as we navigate through the aisles. He’ll often try to sneak a toy or some sort of candy into the cart (like any normal toddler), but I use this activity to teach him the difference between “things we need” and “things we want”.
While brain-storming ideas for today’s Chex mix recipe, I was trying to encompass all of Dylan’s favorite things: Peanut Butter, Cereal and Marshmallows. He also loves Grapes, Blueberry Muffins and Cheese… but I didn’t really think those would blend together well.
This recipe is absolutely perfect to make with small children.
There is no baking required and they will love helping mix all the dry ingredients together. I am a firm believer that children (especially toddlers) should help in the kitchen. It teaches them life skills at an early age and encourages them to try new things. I opted for Wheat Chex to make this recipe a little healthier… but who am I kidding? It’s a delicious pile of carbs covered in Ghirardelli White Chocolate. 🙂 As long as we’re not eating recipes like this everyday, I’m ok with the splurge.
The only part of this recipe that requires heating is the White Chocolate Chips.
Once all the dry ingredients have been measured and place in a large mixing bowl (we opted for two mixing bowls because we didn’t have one big enough for the entire recipe), simply microwave the chips with a dab of butter for 1 – 2 minutes in the microwave. Once the chocolate is melted, mix together with try ingredients until well combined. Pour onto a baking tray lined with parchment paper and allow to cool.
This Chex Mix recipe is a total of 8-ingredients, and I bet you already have most of them in your pantry.
We ended up going to the store because my husband and I did Whole30 for the month of January… but normally we would have probably already had most of the items we needed readily available. This recipe is very forgiving and you can swap ingredients for what your tastebuds prefer. Just try to stick with 9 cups dry mix for every 24 ounces of chocolate.
OTHER RECIPES YOU MIGHT LIKE
- 2 cups Peanut Butter Chocolate Cheerios
- 2 cups Wheat Chex
- 2 cups Pretzel Sticks
- 1 cup Honey Roasted Peanuts
- 1 cup Peanut Butter M&M's
- 1 cup Mini Marshmallows
- 2 (12 ounce) bags of White Chocolate Chips
- 2 tbsp. Butter
- In an EXTRA LARGE mixing bowl (or two medium bowls), combine first six ingredients and set aside.
- Heat White Chocolate Chips in a microwave-safe bowl with Butter for 1 - 2 minutes (ours took 2 minutes). Make sure to mix about halfway through cooking time.
- Pour melted White Chocolate over cereal mix and stir until all the dry ingredients are evenly covered.
- Spread onto 2 large baking sheets covered in wax paper. Let cool for 10 minutes and then break part into smaller chunks.
- Store in an air tight container until you're ready to serve. (Also store leftovers in air tight containers.)
