About a month ago, I took a little tour of Charlotte’s very own Doc Porter’s Distillery. Being a passionate cocktail connoisseur, I was thrilled to glance behind the scenes and see how their spirits are crafted. First and foremost I want to thank Andrew & Liz Porter, along with their team, for allowing us to stop by and showcase their products on my blog. Christmas Old Fashioned
When I arrived I was pleasantly greeted by Steven Steel and Carl White, Doc Porter’s Marketing Manager and Head Distiller. Doc Porter’s opened their doors in the fall of 2015 with a dedication to milling, mashing, fermenting, distilling and bottling all of their spirits in house. In just two years they have released an impressive lineup of four craft liquors (which have also stirred up quite a dedicated following, including myself). Their current grain to glass varieties include Vodka, Gin, Bourbon and Rye Whiskey.
During my tour, I was shown the entire operation from grain to glass. One thing that spiked my interest in particular was seeing their bourbon before it was placed in the aging barrels. Did you know that bourbon is actually clear and gets the caramel color from the aging process? I sure didn’t.
Mini tours ($7) are given on Friday evenings between 6PM – 8PM; it includes a tasting and does not require a reservation. If you are seeking a fully-guided owner tour ($15), these are offered on most Saturdays and include a tour of the facility, an overview of their distilling process and proper tasting.
