Gently mix the ground chicken, dijon, paprika, cayenne, garlic, and pimento cheese in a large bowl. Divide mixture and form into four patties.
Heat oil in a large skillet over medium heat. Sear the patties for about 4 - 5 minutes per side, or until internal temperature has reached 165F.
While the burger patties rest for a few minutes, go ahead and toast the buns if you’d like. Then assemble with bacon, pickles, lettuce, green onions, and drizzle with desired amount of spicy ranch. Serve immediately.
