Two-Bite Apple Streusel Wonton Cups

Serves: 24 cups
Ingredients
  • 24 Wonton Wrappers
FOR THE APPLE FILLING:
  • 3.5 cups chopped Granny Smith Apples (approx. 3 apples)
  • Juice of ½ Lemon
  • ¼ cup Water
  • 2 tbsp. Salted Butter
  • ⅓ cup Brown Sugar
  • 2 tsp. Cinnamon
  • 4 ounces Cream Cheese
FOR THE STREUSEL TOPPING:
  • ¾ cups Old Fashioned Oats
  • ¼ cup All Purpose Flour
  • ½ cup Brown Sugar
  • ½ cup Unsalted Butter, melted
Instructions
  1. Preheat oven to 350F.
  2. Lightly spray a muffin tin with cooking spray and place one wonton wrapper in each cup, making sure to press down on each side to mold the wrapper into the cup.
  3. Bake for 8 - 10 minutes, or until lightly browned. When finished, remove from oven and set aside.
  4. While the cups bake, go ahead and cut the apples into small chunks and mix them with lemon juice in a medium-sized bowl to prevent browning.
  5. Add the apples to a large saucepan with water, butter, brown sugar and cinnamon. Bring to a simmer and then turn the heat down to allow liquid to cook down (about 6 - 8 minutes).
  6. Once cooked down, remove the apple filling from heat and stir in the cream cheese.
  7. Mix together all ingredients for the streusel topping in a medium bowl and set aside.
  8. To assemble, simply spoon some apple filling into each wonton cup and top with desired amount of streusel. Bake for an additional 10 minutes and enjoy!
