BBQ Chicken Cast Iron Skillet Pizza
Serves: 8 slices
  • 1 tbsp. Olive Oil
  • 1 tbsp. Cornmeal
  • 1 pre-made Pizza Dough
  • ¼ cup BBQ Sauce
  • ½ cup Shredded Chicken
  • ¼ of a small Red Onion, diced
  • Pickled Jalapeno Slices
  • 1 cup Mozzarella Cheese, shredded
  • 1 handful fresh Cilantro, chopped
  1. Preheat oven to 425F.
  2. Lightly oil a 12-inch cast iron skillet with 1 tbsp. olive oil and then sprinkle with cornmeal.
  3. Roll out dough on a floured surface to a circle. Place the dough in the skillet and spread to the edges of the pan.
  4. Top with bbq sauce and shredded chicken and then bake for 15 minutes.
  5. Remove from oven and check the bottom of the crust for doneness.
  6. Crank up the oven to 550F. While it preheats for a couple minutes, top the pizza with red onion, jalapeƱos and mozzarella cheese.
  7. Bake at 550 for 4 minutes or so, until cheese is melted and bubbly.
  8. Remove from skillet and sprinkle with cilantro. Slice on a cutting board and serve immediately.
