BBQ Chicken Cast Iron Skillet Pizza
- 1 tbsp. Olive Oil
- 1 tbsp. Cornmeal
- 1 pre-made Pizza Dough
- ¼ cup BBQ Sauce
- ½ cup Shredded Chicken
- ¼ of a small Red Onion, diced
- Pickled Jalapeno Slices
- 1 cup Mozzarella Cheese, shredded
- 1 handful fresh Cilantro, chopped
- Preheat oven to 425F.
- Lightly oil a 12-inch cast iron skillet with 1 tbsp. olive oil and then sprinkle with cornmeal.
- Roll out dough on a floured surface to a circle. Place the dough in the skillet and spread to the edges of the pan.
- Top with bbq sauce and shredded chicken and then bake for 15 minutes.
- Remove from oven and check the bottom of the crust for doneness.
- Crank up the oven to 550F. While it preheats for a couple minutes, top the pizza with red onion, jalapeƱos and mozzarella cheese.
- Bake at 550 for 4 minutes or so, until cheese is melted and bubbly.
- Remove from skillet and sprinkle with cilantro. Slice on a cutting board and serve immediately.
