Spiralized Pasta Salad
Serves: 6
  • 2 Sweet Potatoes, spiralized
  • 4 Zucchinis, spiralized
  • 1 small Red Onion, peeled & spiralized
  • 1 cup Cherry Tomatoes, roasted
  • 1 cup Mozzarella cubes (Or you can use shredded)
  • ½ – ¾ cup Garlic-Dijon Cashew Cream (recipe on SliceofJess.com)
  1. Spiralize: Prepare the Sweet Potatoes, Zucchini and Red Onion and set aside in a large bowl.
  2. Blister the Tomatoes: Simply put your tomatoes in a frying pan and heat on medium-high heat until they start to blister. About 8 minutes.
  3. Plate for Serving: Throw all ingredients listed in a large serving platter and add Garlic-Dijon Cashew Cream. Toss together with tongs until well coated  and mixed together. Add more Cashew Cream, if necessary.
