Instructions
Spiralize: Prepare the Sweet Potatoes, Zucchini and Red Onion and set aside in a large bowl.
Blister the Tomatoes: Simply put your tomatoes in a frying pan and heat on medium-high heat until they start to blister. About 8 minutes.
Plate for Serving: Throw all ingredients listed in a large serving platter and add Garlic-Dijon Cashew Cream. Toss together with tongs until well coated and mixed together. Add more Cashew Cream, if necessary.
