Turkey Meatloaf Recipe with a Mexican Twist
 
 
Ingredients
For the Meatloaf
  • 1 lb. Ground Turkey (93/7)
  • 1 can of Black Beans, rinsed
  • 1 cup Corn Kernels
  • ½ cup Red Onion, chopped
  • 1 cup Cilantro, chopped + more for garnish
  • 1 small can chopped Green Chilies
  • 2 Eggs
  • 1 cup crushed Tortilla Chips
  • 2 tbsp. Aji Amarillo Paste (optional)
  • 1 fresh JalapeƱo, minced (optional)
  • ½ cup shredded Mexican Cheese
  • Olive Oil, as needed
My Grandma's Meatloaf Sauce:
  • ½ cup Ketchup
  • ¼ cup BBQ Sauce (use your favorite)
  • 2 tbsp. Mustard (I like using stone ground)
  • 3-4 tbsp. Ranch Dressing
  • 1-2 shakes Hot Sauce (optional)
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl, combine all ingredients (except the cheese) and mix well.
  3. Form into two loafs (they cook better this way) and place side-by-side on a well greased cookie sheet lined with foil.
  4. Bake for 40 minutes.
  5. Once cooked to an internal temp of 165F, sprinkle the top with cheese and place under the broiler for 4-5 minutes (until bubbly and browning).
  6. Remove from oven and garnish with fresh cilantro and meatloaf sauce.
