Turkey Meatloaf Recipe with a Mexican Twist
- 1 lb. Ground Turkey (93/7)
- 1 can of Black Beans, rinsed
- 1 cup Corn Kernels
- ½ cup Red Onion, chopped
- 1 cup Cilantro, chopped + more for garnish
- 1 small can chopped Green Chilies
- 2 Eggs
- 1 cup crushed Tortilla Chips
- 2 tbsp. Aji Amarillo Paste (optional)
- 1 fresh JalapeƱo, minced (optional)
- ½ cup shredded Mexican Cheese
- Olive Oil, as needed
- ½ cup Ketchup
- ¼ cup BBQ Sauce (use your favorite)
- 2 tbsp. Mustard (I like using stone ground)
- 3-4 tbsp. Ranch Dressing
- 1-2 shakes Hot Sauce (optional)
- Preheat oven to 375F.
- In a large bowl, combine all ingredients (except the cheese) and mix well.
- Form into two loafs (they cook better this way) and place side-by-side on a well greased cookie sheet lined with foil.
- Bake for 40 minutes.
- Once cooked to an internal temp of 165F, sprinkle the top with cheese and place under the broiler for 4-5 minutes (until bubbly and browning).
- Remove from oven and garnish with fresh cilantro and meatloaf sauce.
