Aji Amarillo Sauce
- 2 tbsp. Aji Amarillo Paste
- ½ cup Mayonnaise
- ¼ cup Queso Fresco or Cojita, finely crumbled
- Juice of 1 Lime (about 3 tbsp.)
- Salt, to taste
- Freshly Ground Black Pepper, to taste
- Whisk all ingredients in a medium sized bowl until well combined. Add salt, taste, and adjust per your personal preferences. Serve immediately.
- Refrigerate any leftover sauce in an airtight container for up to 5 days. Mix together before serving again.
