Aji Amarillo Sauce is a staple ingredient for Peruvian cooking. I use this sauce on EVERYTHING... you name it, it goes well with it.
Serves: about 1 cup
Ingredients
  • 2 tbsp. Aji Amarillo Paste
  • ½ cup Mayonnaise
  • ¼ cup Queso Fresco or Cojita, finely crumbled
  • Juice of 1 Lime (about 3 tbsp.)
  • Salt, to taste
  • Freshly Ground Black Pepper, to taste
Instructions
  1. Whisk all ingredients in a medium sized bowl until well combined. Add salt, taste, and adjust per your personal preferences. Serve immediately.
  2. Refrigerate any leftover sauce in an airtight container for up to 5 days. Mix together before serving again.
