Cheesy Hamburger and Rice Casserole

A growing-up classic! Hamburger and Rice Casserole is filled with all your comfort food favs: beefy, creamy, cheesy, and super satisfying.
Serves: 8
Ingredients
  • 4 cups Cooked White Rice
  • 1 lb. Ground Beef
  • 2 tsp. Dried Ranch Seasoning Mix
  • 1 Small Yellow Onion, diced
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 3 Garlic Cloves, minced
  • 1 (10.5 oz) can Cream of Mushroom Soup
  • ½ cup Milk
  • 4 oz. Mascarpone or Cream Cheese
  • ¼ cup Sour Cream
  • 8 oz. Block of Melty Cheese, shredded
  • 2 tbsp. Minced Italian Parsley, for garnish
Instructions
  1. Preheat the oven to 350F and grease a large baking dish with non-stick cooking spray or melted butter and set aside.
  2. Add the ground beef to a skillet with the onions and dried ranch seasoning. Sauté until the beef is fully cooked and the onions are softened. Add the garlic and continue to sauté for 1 more minute. Season with salt, pepper, and mix to combine.
  3. Whisk the cream of mushroom, milk, mascarpone (or cream cheese), sour cream and half of the shredded cheese in a large bowl. Add the ground beef mixture, rice, and fold together to combine. Pour into the greased baking dish and top with remaining cheese.
  4. Bake, covered with foil, for 20 minutes. Remove the foil and broil until the top is caramelized and crispy. Sprinkle with Italian parsley and serve immediately.
