Ditch the takeout and make these Beef Bulgogi Bowls at home! With a few shortcuts, these come together in less than 30 minutes. Yes, please!
Serves: 4
Ingredients
FOR THE QUICK PICKLED VEGGIES:
  • 1 English Cucumber,
  • 5 oz. Shredded Carrots
  • ¾ cup Rice Vinegar
  • 1 tbsp. Honey
  • Salt
  • Korean Pepper Flakes
BEEF BULGOGI:
  • 1 tsp. Olive Oil
  • ½ Yellow Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 1 tbsp. Ginger Paste
  • 1 lb. Ground Beef
  • 2 tbsp. Soy Sauce
  • 1 tsp. Fish Sauce
  • 2 tbsp. Gochujang
  • 1 tbsp. Honey
  • 1 tbsp. Rice Vinegar
FOR SERVING:
  • Bibb or Green Leaf Lettuce
  • Cooked White Rice
  • Kimchi
  • Chili Crunch or Hot Sauce
  • Dried Chow Mein Noodles
  • Green Onions
  • Sesame Seeds
Instructions
  1. Place all ingredients for the quick pickled veggies in a bowl. Set in the fridge until ready to use.
  2. Add the olive oil in a large skillet over medium-high heat. Sauté the onions for 3 minutes and then add the garlic and continue to cook until fragrant.
  3. Squeeze in the ginger paste and add the ground beef. Break apart and cook until browned. Drain any access grease and then add the soy sauce, fish sauce, gochujang, honey, and rice vinegar. Continue to simmer until thickened.
  4. Serve beef and quick pickled veggies over suggested serving items for the bowls and enjoy!
